I followed the recipe to a T and the ribs were just a sickening sweet mess! It was liked steamed meat with syrup poured on it. I can't believe this is his recipe or that you others liked it. I took a chance because of the raves but being from the south, I like dry, spicy, smoked ribs so I'll chalk this up to a lesson learned! I also had to bake them longer, about 3 hours, and they probably could have used more, and the glaze reduced about an hour or so to get it to the right consistency. But it was DELICIOUS. The only reason for the 4 star review as opposed to 5 was because of the ingredients. I did not use Cardemon at all (way too expensive to purchase unless I had any idea of other recipes to use it in). I did use the Vanilla bean, but frankly I don't know if it really made a difference and that too is extrememly expensive. I might suggest cooking the ribs a little longer at a slightly lower tempurature for those of you who prefer the fat to cook off a bit more. However, all that said... this is a must try and you will love it. Very easy recipe and prep time was a joke. Oh, one more thing... I was taught a long time ago to remove the very fine membrane from the back of the ribs and this makes a huge difference. You have to put the raw ribs under cold running water and get a slight edge of the membrane and pull. Sometimes it is easy and sometimes not. It really helps the ribs to be more tender. I vacuum sealed it for two days in the fridge and placed it on the grill. I cooked the loin until the internal temperature was about medium rare and began glazing it with the spicy apple. I pulled the loin off the grill and let it sit long enough for the temp to raise to medium (also to let the juices settle.) The center loin came out beautifully! I think I will do this again for the upcoming holidays!! I was out of cayenne pepper so used pasilla chili powder in the dry rub. It probably didn't turn out as spicy as it would have, but some family members aren't into really spicy foods, so it was perfect. The ingredients were a little hard to find. I went to Cost Plus World Market to get the cardomom pods and Allspice Berries. I did have to simmer the sauce about 1 3/4 hours to get it to a "glaze" consistancy. I'll be using this recipe from now on. Probablly will be adding extra "hot" since we like a lot of spicy heat.
