Onions made it a little too much... 12/31/2004 at 08:06pm User: JAMES from McKinney, TX User Rating: Next time I make it I may elminate the red onion. It seemed to overpower everything else in the salad. The pineapple was amazing with this however, and would definitely put MORE fresh pineapple in. anytime salad! 12/16/2005 at 07:00pm User: Anonymous User Rating: very nice and fresh looking salad. It's a good idea to add more pineapple juice. I usually save the juices from from other canned pineapple products that I used, and that's what I used in this salad. It made a big difference on it's taste! I will definitely make it again and again. Very strong 11/21/2005 at 11:41am User: Anonymous User Rating: This dish is very appealing to the eye. It is tasty is very small amounts, but I found it to be strong because of the onions. Good 11/16/2005 at 06:46pm User: Angie from Laguna Niguel, CA User Rating: I liked the salad and the dressing. Perhaps if the salad were made earlier and had a chance to marinate it would be a bit more zippy. Good salad! 11/05/2005 at 10:50am User: Anonymous User Rating: This salad was so different and beautiful looking! Next time, I may add something with a bit more zing to the dressing - perhaps a bit of vinegar - and I may decrease the amount of red onion used. The pineapple was a very refreshing change to a salad. great 10/11/2004 at 02:36pm User: LORRI from Milan, OH User Rating: I really enjoyed this and was proud to serve it to guests! Dressing needs help 10/02/2004 at 03:08pm User: Anonymous User Rating: I really like the salad itself, but the dressing was a disappointment. taste surprise 10/01/2004 at 05:20pm User: RUTH from anderson, IN User Rating: My husband and I absolutely love this salad. The pineapple is a surprise.I used a fresh pineapple that I cut up myself, There was no extra juice, but that didn't seem to matter. YUM! Delicious and Dietic 09/26/2006 at 03:45pm User: DON from Broken Arrow, OK User Rating: For those of you Watching Your Weight, this dish is delicious, easy to prepare, and easy on the points. Interesting 09/22/2006 at 11:01am User: CRYSTAL from Franklin, TN User Rating: The combination is this salad seemed kinda strange at first, but once I tasted it I realized I was wrong. Very Good 08/17/2004 at 03:42pm User: KATHRYN from Las Vegas, NV User Rating: We are salad eaters in our home and this was the ticket, very colorful, easy to make, full of good stuff. Yummy stuff! very refreshing 08/17/2004 at 03:00pm User: VIKKI from fayetteville, NC User Rating: this salad is extremely easy to prepare. it is very light. next time i will use less onions (my family thought they were overpowering the other ingredients). it was great! Outstanding! 08/17/2004 at 12:00am User: CYNTHIA from Fort Lewis, WA User Rating: I never eat salad. As a matter of fact, I have never eaten an entire salad in my life... and I am 29 years old! I ate every bite of this salad though. It was outstanding. I made one tiny modification though -- my hubby doesn't like raw onions so I chopped the onion very finely and sauteed it. Then I mixed it into the dressing. It was wonderful... light, crisp, refreshing and a bit tropical. great summer salad 08/15/2004 at 10:57am User: JAIME from Williamsville, NY User Rating: This recipe was really very unique, simple and impressive. It's gorgeous with all the colorful vegetables and my guests seemed very pleased with it. The only thing I would change is the amount of dressing. I actually used less than the 1/4 c. pineapple juice and the rest was exactly what was called for, but I found it to be swimming a little bit in dressing. I would cut down on the amount of olive oil slightly next time because it was just a little greasy. to die for salad without lettuce 08/15/2004 at 07:37am User: CARLA from Chesterfield, MO User Rating: Very Quick, very healthy and very very good! Disappointing 08/14/2006 at 06:52am User: Amanda from Frederick, MD User Rating: Maybe my pineapple didn't have enough juice, but in the end this salad just tasted like a bunch of chopped vegetables. Period. 08/14/2004 at 02:55pm User: Anonymous User Rating: Different, easy, tasty! 08/13/2006 at 09:30pm User: Charlene from Hawthorne, CA User Rating: I made this and I loved it and most of the others I made it for loved it too. My husband didn't care for it, but he's not a fan of viniagrette type salads. When I made this I reduced the amount of onion to about half, shaved them very thin before adding them to the salad. I added fresh chopped cilantro to it and doubled up on the pineapple juice and reduced the amount of chili powder. It was a very tasty recipe and I will probably make it again if I'm feeding a lot of people. The Key to this Recipe is..... 05/17/2007 at 04:19pm User: Kimberly from San Diego, CA User Rating: ...making it a day ahead. The flavors infuse so much more with a day to marinate.I also added CILANTRO and it made it even more tasty.I would elimate or decrease the red onion next time. I recently served it and had 5 requests for the recipe - it was a hit!! Big, chunky and delicious! Not for me. 05/08/2006 at 06:26pm User: michelle from baton rouge, LA User Rating: Served this at a party at work for twenty people. No one really cared for it, too much celery and dressing was odd. I did take eevryone's advice and cut down on the onion but it was still strong. A Fiesta of color and taste 04/26/2007 at 10:36pm User: Raulie from Golden Valley, MN User Rating: SO GOOD. Delish with the pinapple. It makes a lot and would be a perfect salad for pot luck or picnic. My work friends could not stop talking about it. They said SUPER GOOD. I would make this again for sure. No taste 04/23/2007 at 09:00pm User: Anonymous User Rating: I didn't think this salad had any real flavor other than the veggies and fruit themselves. I won't make this again. ok 04/19/2007 at 03:53pm User: Chrisynda from Canton, GA User Rating: it was ok, too many veggies, not enough fruit Delish with some modifications 04/16/2007 at 10:20pm User: Debby from Salinas, CA User Rating: I wasn't too keen on the chili powder and hot sauce idea, but I used a staple in my pantry-- Sweet Chili Sauce, a product of Thailand. I used that, with a dash of white wine vinegar, lime juice, S&P and olive oil and pineapple juice. I had all the veggies on hand, and needed to use them up so this was my inspiration. I had way too many cans of pineapple slices, which worked out great. I thought the whole salad had gorgeous color and I thought it was refreshing. Oh, and I only used 1/4 red onion, sliced very thin. If you love cilantro, I think it could be a nice garnish too. Thanks, Rachael! Tasty! Even my kids liked it! 04/15/2007 at 09:37pm User: Amalia from Mission, TX User Rating: I made this salad following some of the advice from other members. I thinly sliced the onion and decreased the amount by half. I also added a few dashes of flavored vinegar to it and omited the tabasco. My family liked it! It was a hit with my 4 yr old son and 2 yr old daughter! They loved the pineapple taste mixed with the veggies. It is a nice change from just ordinary salad. I will definitely make it again! Fruit and Vegetable Fiesta Salad 01/20/2005 at 09:24am User: Anonymous User Rating: great salad very refreshing 01/18/2005 at 12:39pm User: Anonymous User Rating: This salad was very good and extremely easy to make. However, I didn't care for the onions in it. Next time I make it, I will leave the onions out. I was very surprised at how well I liked the salad. The flavors of the fruit and vegetables mixed together unbelivably well. Great snack too! Good with Changes 01/17/2005 at 04:22pm User: Anonymous User Rating: The changes I made were just to accommodate my "rule" that fruit doesn't go in salads. I omitted pineapple/juice from both the salad and the dressing. I added avocado to the salad and red wine vinegar to the dressing, and it turned out great. It was refreshing and tasty. wonderful 01/17/2005 at 01:10pm User: VICKI from colfax, CA User Rating: I fixed this as a potluck dish, to go along with chicken fajitas. They complemented each other perfectly!! I heard more people asking about the salad than the rest of the meal. Several people (myself included) believe that the onion and pineapple made the salad. Definitely a keeper. If you like... 01/15/2005 at 01:42am User: TYLER from San Antonio, TX User Rating: If you like the pepper/ sweet fruit combo then this is a good salad... otherwise beware. I agree! Hold those onions 01/12/2005 at 07:20pm User: RENEE from Thiensville, WI User Rating: I agree with James from Texas. The salad was really good -- especially the pineapple, but the onion seemed to take over. Maybe I just used a really strong onion . . . . Fiesta 01/11/2005 at 07:53pm User: CYNTHIA from pittsburgh, PA User Rating: Thank you Rachel! This salad is a great "go with" My husband raved about it. I added a little splenda to the dressing as the pineapple juice wasn't as sweet. Great combination and a great way to get those fruits and vegetables Great 01/09/2005 at 02:11pm User: CINDY from Walnut Creek, CA User Rating: I really enjoyed this. Great combo. Nice salad to serve with the Mexican Lasagna. Tasty, but.... 01/05/2005 at 05:35pm User: DONNA from West Bath, ME User Rating: The dressing needed a little something. I put in a hefty splash of red wine vinegar and it was just the ticket! Would make again. Very light and Fresh!!!!! 01/04/2005 at 06:43pm User: KIM from acworth, GA User Rating: I loved this salad.
