Onions made it a little too much...

Next time I make it I may elminate the red onion. It seemed to overpower everything else in the salad. The pineapple was amazing with this however, and would definitely put MORE fresh pineapple in.

anytime salad!

very nice and fresh looking salad. It's a good idea to add more pineapple juice. I usually save the juices from from other canned pineapple products that I used, and that's what I used in this salad. It made a big difference on it's taste! I will definitely make it again and again.

Very strong

This dish is very appealing to the eye. It is tasty is very small amounts, but I found it to be strong because of the onions.

Chunky Fiesta Salad

Love the chunky veggies. Perhaps if the salad were made earlier and had a chance to marinate it would be a bit more zippy.

Good salad!

This salad was so different and beautiful looking! Next time, I may add something with a bit more zing to the dressing - perhaps a bit of vinegar - and I may decrease the amount of red onion used. The pineapple was a very refreshing change to a salad.

I love this fruit and veggie fiesta salad. We feasted on it for 3 days. It's also great to make for cookouts. You'll love it!

This was very easy, but I was disappointed in the dressing. Next time I will add a little more lime. The combo of pinapple and veggies was a refreshing treat.

Outstanding!

User: CYNTHIA from Fort Lewis, WA    User Rating:
I never eat salad. As a matter of fact, I have never eaten an entire salad in my life... and I am 29 years old! I ate every bite of this salad though. It was outstanding. I made one tiny modification though -- my hubby doesn't like raw onions so I chopped the onion very finely and sauteed it. Then I mixed it into the dressing. It was wonderful... light, crisp, refreshing and a bit tropical.

great summer salad

User: JAIME from Williamsville, NY    User Rating:
This recipe was really very unique, simple and impressive. It's gorgeous with all the colorful vegetables and my guests seemed very pleased with it. The only thing I would change is the amount of dressing. I actually used less than the 1/4 c. pineapple juice and the rest was exactly what was called for, but I found it to be swimming a little bit in dressing. I would cut down on the amount of olive oil slightly next time because it was just a little greasy.

Maybe my pineapple didn't have enough juice, but in the end this salad just tasted like a bunch of chopped vegetables. Period.

I made this and I loved it and most of the others I made it for loved it too. My husband didn't care for it, but he's not a fan of viniagrette type salads. When I made this I reduced the amount of onion to about half, shaved them very thin before adding them to the salad. I added fresh chopped cilantro to it and doubled up on the pineapple juice and reduced the amount of chili powder. It was a very tasty recipe and I will probably make it again if I'm feeding a lot of people.

...making it a day ahead. The flavors infuse so much more with a day to marinate.I also added CILANTRO and it made it even more tasty.I would elimate or decrease the red onion next time. I recently served it and had 5 requests for the recipe - it was a hit!! Big, chunky and delicious!

Not for me.

Served this at a party at work for twenty people. No one really cared for it, too much celery and dressing was odd. I did take eevryone's advice and cut down on the onion but it was still strong.

SO GOOD. Delish with the pinapple. It makes a lot and would be a perfect salad for pot luck or picnic. My work friends could not stop talking about it. They said SUPER GOOD. I would make this again for sure.

Delish with some modifications

User: Debby from Salinas, CA    User Rating:
I wasn't too keen on the chili powder and hot sauce idea, but I used a staple in my pantry-- Sweet Chili Sauce, a product of Thailand. I used that, with a dash of white wine vinegar, lime juice, S&P and olive oil and pineapple juice. I had all the veggies on hand, and needed to use them up so this was my inspiration. I had way too many cans of pineapple slices, which worked out great. I thought the whole salad had gorgeous color and I thought it was refreshing. Oh, and I only used 1/4 red onion, sliced very thin. If you love cilantro, I think it could be a nice garnish too. Thanks, Rachael!

Tasty! Even my kids liked it!

I made this salad following some of the advice from other members. I thinly sliced the onion and decreased the amount by half. I also added a few dashes of flavored vinegar to it and omited the tabasco. My family liked it! It was a hit with my 4 yr old son and 2 yr old daughter! They loved the pineapple taste mixed with the veggies. It is a nice change from just ordinary salad. I will definitely make it again!

This salad was very good and extremely easy to make. However, I didn't care for the onions in it. Next time I make it, I will leave the onions out. I was very surprised at how well I liked the salad. The flavors of the fruit and vegetables mixed together unbelivably well. Great snack too!

Good with Changes

The changes I made were just to accommodate my "rule" that fruit doesn't go in salads. I omitted pineapple/juice from both the salad and the dressing. I added avocado to the salad and red wine vinegar to the dressing, and it turned out great. It was refreshing and tasty.

wonderful

I fixed this as a potluck dish, to go along with chicken fajitas. They complemented each other perfectly!! I heard more people asking about the salad than the rest of the meal. Several people (myself included) believe that the onion and pineapple made the salad. Definitely a keeper.

I agree with James from Texas. The salad was really good -- especially the pineapple, but the onion seemed to take over. Maybe I just used a really strong onion . . . .

Thank you Rachel! This salad is a great "go with" My husband raved about it. I added a little splenda to the dressing as the pineapple juice wasn't as sweet. Great combination and a great way to get those fruits and vegetables
