I substituted a block of cream cheese at a fraction of the cost. Since the topping was so flavorful, there was no need to season the cream cheese. I have also tried it using a Blue Cheese Round vs. a Boursin Cheese Round and topped it with Sun Dried Tomato Pesto. I do not find the cheese to be as expensive as one of the other reviewers commented on. I bought the cheese in the Dairy Section of my grocery vs. the specialty cheese aisle. I always get asked how to make this dish!! Way to go Rachel!! It was worth all the calling and driving around trying to find the sun-dried tomato spread and sun-dried tomato tapenade...yes, they do exist. Either of them tastes great. I would take this to any/every party!! It takes the 60s version of covering cream cheese with red sauces to the next level. |
