I made this recipe for the first time when my in-laws were coming over for dinner. I used both cutlets and breasts and finished cooking these in the oven after I fried them in the pan. Everyone enjoyed it and my husband said it tasted better the next day.

I was quite surprised at how easy this was to put together. And it turned out quite tasty as well. I skimped a little on the refrigerator time for the chicken, but it was still wonderful.

It was a cramped enviorment, and had some interferance from a few room mates, however, if i can make it in an old dorm kitchen and have 3 girls want date me, I think it is a perfect dish for some close friends or to impres a date.

Good Recipe, very tasty, juicy but it takes more then 10 minutes to cook. It took me about 20 minutes. it was not cooked on the inside. I put spinach and cheese inside the chicken...it came out perfect. Thanks so much

I've tried other recipes for Chicken Kiev, but this is the best one I've tasted. I like the crunch that the panko gives to the dish as well as the herb blend in the butter. This one is most definitely a keeper!

I've made this before... but never this way. It's so much easier to use the saran wrap. My mother's recipe uses toothpicks. I also modified this to make mini-kiev's for a super bowl party. I cut the breasts in thirds. It was surprisingly easy to make. And "mini-kiev's" were a hit. Another variation I did was to use an Italian sausage (different show) as the center instead of butter. And... because I was pressed for time, I put them in the freezer for 30 minutes instead of putting them in the fridge.

I have made this several times, once I master the all important chicken flattening technique the only remaining issue was that the inside of the chicken wasn't done and the outside was a little on the crispy side. My solution was to fry the chicken as directed and finish it off in the oven (350 degrees for like 7 minutes).

This is a really good tasting recipe. I tried butterflying whole breasts. The meat turned out being too thick to cook in the oil without drying out. Will not do that again when I make this next time.

This is a recipe sure to WOW others in presentation alone!! It was my first time preparing a compound butter and found it to be very easy. When I pounded out my chicken breasts they fell apart, but I wrapped them tightly and let them sit for five hours in the refrigerator before frying and none of the little pieces fell off. They looked stunning. I used Club crackers for the breading as opposed to Japanese breadcrumbs because that is what I had at home. All and all, this is a very impressive looking dish, and surprisingly easy, just time consuming. I would love to hear what others serve with it.

I love Panko bread crumbs! Definitely use them, they make the chicken extra crispy! This was crispy and juicy, but too salty for me. Next time I will cut down on the salt!

This dish was so easy to make. I'm 17 and if I can make it, anyone can. The only bad part was that the inside of some of the chicken's werent cooked all the way, but thats probably because I didn't leave them in long enough.

This recipe was very easy to do. I did the prep with the butter in the morning, prepared the chicken in the afternoon a placed it in the fridge until that evening. When it was time for dinner all I had to do is the final cooking and it went flawlessly. I wouldn't change a thing! Thanks!

Easy to prepare. My guests did not leave one morsel on their plates. I used my inexpensive but highly rated chicken fry pan over medium (350 degrees F) heat and flavored the oil with some of the herb butter. Panko is my choice for many delicate meats and seafood. A surefire 5-star winner. Thanks Alton!

Make sure you read the other suggestions. Keep the butter role small like a dime as suggested. Also I add ed Emeril's Essence to flour a d rolled in the flour befor the egg wash and panko. This puts a taste in your mouth that will stay with you and that is one of the things that I look for. A diffenate resturant quality receipe. Keep working with the rollign and it improves every time.

This dish is a lot of work, but it well worth the effort. I thought it was delicious as is, but my husband wanted me to try some kind of a sauce next time (he likes EVERYTHING with some kind of gravy). I plan to try it with Emeril's Welsh Rarebit Sauce without the hot sauce, next time in order to please everyone in the family. So far, all of Alton's recipes I have tried have been winners at our house.

I used fresh herbs and it was amazing! I think there is too much salt though and next time I will reduce to 1/4 tsp salt for all 4 breasts. I flash fried the coating then baked them in the oven since I dont like frying many foods for dietary reasons. Even with all my changes this recipe is a keeper and fast! Thanks to Alton for easy day yummy recipe!

I saw this recipe and decided to try it for out Valentine's dinner. It was a different take on how I usually prepare this dish. I have never used panko bread crumbs; to me it was a little bland but added a nice crunch to the dish. The idea of preparing the butter with the spices was EXCELLENT!!! I put minced garlic and onions in the butter, since I usually put them in the chicken. If you are pressed for time I recommend using toothpicks to hold the chicken together for cooking. I usually use Italian bread crumbs after the egg wash. I was reluctant to fry the chicken because it is not as healthy. If you have nice cookware then I would recommend browning the chicken with a little EVOO and then place in the oven to finish cooking through and through. NOTE: if you use the browning approach use a little wine to get the pan drippings up and pour over chicken for a lagniappe. My husband thought it was O.K. but preferred the way I usually prepare this dish.

I have made this several times, and decided to try something different. I highly recommend putting it in the oven for about 15 mins, before frying. It prevents it from coming unfolded as well as browning too fast.

The main information missing is how to halve the chicken breasts. I went through 3 before I figured it out. The reviewer that wrote to keep the butter roll small was right on the button ? No larger than a dime roll. The fry temperature of 350 instead of 375 was also good. This is my first ?meh? review of an Alton Brown dish. It looked great but just didn?t have a lot of taste. After all the time involved my wife and I just expected ?.more.

I swapped pork for chicken and was astonished with the outcome. I hope you and Mister Kiev will get over it, but the other white meat works perfectly. Imagine juicy pork. I am thinking of substituting herbs next time. Tarragon was delicious. Something more pork friendly is on my mind. Perhaps a dash of garlic

The recipe was easy to do, and it does taste great. I did have to fry them a little longer than prescribed to get to the proper temperature. Don't skimp on the bread crumbs. The Panko Bread Crumbs do make a difference.

Oh my God! I tried this once and I now have a lifetime supply of panko in my pantry. That stuff is AWESOME! By accident, I forgot to put the panko in the filling the first time. The second time I tried it, I added it. I prefer it without. You might give it a try by just omitting the panko from the middle. Otherwise, six stars!!!

Another reviewer mentioned reducuing the temp of the oil if cooking large breasts and I agree; it took a long time to get the internal temperature to 165 and had the oil been hotter it could have easily burned the crust (which would've been a waste of all the time needed to prepare the dish). Also, when forming the butter into a roll, try to keep the diameter no larger than a roll of dimes. This will aid in keeping the rolled breasts from being to large later.

Turned out really well. I froze my chicken breasts for an hour so I could cut them in half because they were quite thick. I finished them in the oven because I think the oil was too hot when I started even though the oil did not reach 375. I the like panko better than bread crumbs because it provided a better "crunch." Next time I am going to add 1/2 to 1 clove of minced garlic to the butter. Overall, easy to make and crispy and delicious. The next time I make it will be for company because most of it can be prepared ahead.

This recipe seemed easy enough, but the rolling of the chicken.... it became a bit daunting. However everything turned out great. I used fresh tarragon instead of dried (what I had in the house) None of my chickens fell apart and they were all throughly cooked at about 5-6 minutes a side. The chicken was very tender and juicy - it was a definite crown pleaser!

WOW! If you want something that is easy to make and extra GBD (Golden Brown and Delicious), try this recipe. The combination of the egg wash and panko crumbs makes an unbelievably crispy crust that mimics crispy chicken skin. Juicy and very flavorful on the inside too. If you want to save some time, skip putting the rolls in the fridge for 2 (or more) hours and put them in the frezer, wrapped in plastic, for 10 to 15 minutes. Keep the oil a little lower than 375 if you have big breasts (on the chicken that is) and you'll reach GBD at the same time the internal temp reaches 165. BTW - internal temperature is critical, use a thermometer! Finally, if you have good tarragon, you might want to reduce it to 3/4 of a teaspoon - mine was a little heavy on the tarragon with 1 teaspoon. Overall, Great Recipe! Thanks Alton!

The Chicken Kiev was worth the effort it took to make. Make sure to pound the chicken really flat. One or two of my peices weren't flat enough and opened up when fried. Fry on a cool heat to start with. It take a long time for the heat to penetrate the cooled rolls.
