The only changes I made where to leave out the beans (not a fan) and double the ingredients, because you will want plenty of leftovers. (and by using more broth it makes it more of a soup, instead of a stew) I used Organic Better Than Bouillon chicken base instead of low-salt chicken broth. Definitely add some garlic to the "trinity" at the end (don't want it to burn) and use White beans. I made this for me and my partner and he loved it. But the next day I turned the left overs in to a masterpiece (Giada, hope you are sitting down honey) I added some whole wheat pasta noodles (summer is coming girls - gotta get in a bathing suit soon) 1 cup of Ricotta cheese and 3/4 Parmesean cheese...mixed it all together with the left overs and baked at 350 for 25 mins. This dish was incredible and there is still left overs in the fridge (the dish that keeps on giving) Watch out Giada - I may have my own show before you know it...can I borrow some of your teeth whitener! I also added two links of chorizo (casings removed) for the meat and stirred in left over 1/2 roasted chicken towards the end. I ended up with shredded chicken in the stew which was fantastic. I also had to add more liquid - a half can of vegetable stock. My family absolutely loved it and went back for seconds and thirds. This recipe is definitely a keeper. Next time I will follow my version and add a jalapeno and maybe a splash of red wine. Also instead of bread I made cornbread which was a great addition. I also made this dish and put it over white rice. I also added garlic to the vegetables in the beginning. To the people who stated that it did not get thick enough, you need to let it simmer longer. I think I may have let it simmered too long because when I was done I had no liquid left which was fine by me. I also used dried thyme and basil, though I would have preferred fresh. My SO loved this and came back for seconds, said he ate way too much, LOL, though he said he'd never had chicken stew before. I make chicken soup, but this was a much bigger hit. I cooked it longer than called for, to make sure it was thick enough, but it was very dense, when I added the chicken and the undrained beans, and will add more broth when I reheat it. I also added some diced potatoes (two), as was suggested, and served it in bowls over a small amount of noodles, since I thought my SO would prefer it, but will try it over rice the next time. We only had buttered Italian bread, which worked well, since I didn't have the chance to get a baguette, which I will, the next time. And I will definitely be making this again. As for those who object to onions or celery, I diced everything very small (since I'm used to doing this for my father, who objects to onions), which made the flavors come together quite well. This recipe is definitely a keeper and I appreciate the advice from others who have made it.
