The cocoa-spice rub is very tasty, but next time I'll use a little less salt. This recipe yielded enough spice rub for two pork tenderloins. The rub keeps well in the freezer--nice to have on hand next time you find pork tenderloin on sale.

I tried this once and liked it, I've tried it twice and love it. This is great. I didn't think I would like Chocolate used this way, but this is delicious. It was a hit was the entire family from my 59 year old husband down to my 4 year old granddaughter.

The spice rub smells fantastic and was SO easy to mix together! Searing the pork took no time at all, and ultimately, the recipe was a hit! I impresssed my guests and will most definitely use this recipe again!

This smells great while searing and baking, is really tender. We will use a lot less of the pepper the next time. Was very easy to fix. I probably will not fix this again, as it wasn't a huge hit, but another family might really like this.

This was great. We made it with Ellie Krieger's squash maccaroni and cheese. The rub was a bit salty so we will cut down on it next time. Does make a lot, but he says it should store well for 3 months. Might use it on other kinds of meat too!

I made this rub in large batches, bottled them in tiny apothecary jars, and included it with the pork recipe in the food baskets I make up as gifts for my friends at Xmas. By far, this was the favorite in the basket. Thanks Michael...love your show!

I just wanted something different for dinner and this was definately it! Instead of tenderloin I used boneless chops, yum! I didn't have an issue with the salt, but I also quartered the recipe. My boyfriend liked it as well, although he said it reminded him of honey nut cheerios.

According to my finicky husband, "This is the best pork tenderloin I've ever tasted." Excellent spice combination; however, I did cut down on the salt. Since I was in a hurry, I opened a can of maple bacon baked beans and added some of the spice rub to the beans. This was a great compliment to the pork. Next time I'll add some oven roasted sweet potatoes spiced with the rub.

I saw the show and hit the kitchen because I love chocolate and it seemed interesting to try it in my food. The first dish I made was in porkchops, my husband was delighted. It is good on chicken too and of course the pork tenderloin is the best of the all. Thank you for this recipe, my friends think I am a genius but Michael gets the credit.

Tried making this tonight. The pork tenderloin came out nice. It was easy to make the spice rub as I had all the ingredients in the pantry already. Just had to buy the pork at the grocery store. I didn't know what to expect and it came out good. The pork stayed moist. This is a good dish to make especially if you are on a diet. There is no sauce involved with additional calories. The pork is a lean cut. The spice rub gave a nice smell and taste to the tenderloin.

This was really easy to cook and took very little time. I was surprised by how moist the pork remained. The rub adds a nice subtle flavor that isn't sweet (like the smell of the rub alone might have you think...smelled like yummy cookies). I'd be interested to try substituting kosher salt for the sea salt though...the larger crystals were a nice touch, but I'm not sure I could detect the subtle flavor of sea salt and kosher would be less expensive. A new favorite.

We were having steak for dinner, but I wanted a new taste from the same old salt and pepper. I tried the cocoa rub and it worked great! Give it a go, especially if you have leftovers of the rub!

The first thing my guests noticed was the beautiful aroma that infused my home from this dish. The dish is simple to make. The recipe for preparing the tenderloin yielded a very moist roast for an extremely lean cut of pork. And, for such a wonderfully tasting dish, it was so fast to prepare. It's versitile too. It may be sliced in small portions for a very tasty appetizer, or as a very special entree. My thanks to you, Michael!

I didn't care for this seasoning rub. The cooking method resulted in a moist, juicy tenderloin, but the rub was just strange. Not sure why everybody else loves it. I do like all the ingredients separately, but felt that it was just a bit too cinnamon-y. I will say that I used significantly less salt as most of the reviewers recommended. I think there is a big difference between toasting/grinding the whole spices and just using already ground spices like some reviewers did. The toasting of whole spices might have created a more 'earthy' flavor. Not every recipe can be a winner.

After reading all the wonderful reviews, I just had to make this recipe for myself. I made it for a mother's day dinner & changed it up just a tad. I didn't have whole white pepercorns or coriander so I used ground & skiped the toasting part in the recipe. I also use a cherry & cracked pepercorn port wine sauce to jazz up the meat. It was absolutely incredible!!!!! I recommend this recipe for anyone looking for something completely different. Very easy & delicious!

Exellent recipe. Too much salt though. Maybe the sea salt has too much sodium. Would reduce the salt or use kosher salt. Definitely a keeper.

My husband and I made this foe Valentine dinner along with the butternut squash. We loved the pork, but will definitely cut back on the salt . We don't normally add extra salt to our foods and it was a litttle too salty for us. All the other spices were wonderful! Thanks Michael!

I made the rub and used it on London Broil (I already had it at home). This was incredibly easy to make but my dinner guests thought it was the best ever. The cocoa caramelized nicely and gave it a great finish.

Made this for Valetine's Dinner. Tenderloin was nicely seared from the cocoa spice and extremely juicy. I cooked to approximately 161 degrees and let rest for 10 minutes. Will definitely make again.

This is the first time that I used chocolate in a rub, it was yummy!(Culinary term). I also used cheyenne pepper instead of the peppercorns and this gave it heat at the back of the throat. The tenderloin stayed very moist as well. Finally, I made a pan sauce with port wine, chicken stock,onions, shallots, some of the rub, butter, flour and S and P. This too turned out as a fabulous sauce.
