It was also easy to create a variation based upon what I had in the kitchen, which did not include asparagus. I added a little sharp cheddar to the bottom, with the ham, and also sprinkled a little on top before baking. I also cut the heavy whipping cream down to half cream and half milk. I?m sure it?s even more delicious with the full cream, but I kept on thinking of my pharmacy bill and figured I shouldn?t fight fate. Recipe was easy to follow and leaves alot of room to make it your own. I used brocolli instead of asparagus. Worked just great. My whole family thanks you. I served it for brunch with some of my pickiest eaters and all of them raved over it. Of course I gave credit where credit was due and said "my friend Tyler showed me how to make it". Try sauteed mushrooms and red pepper, a cup of grated swiss, and then cut back slightly on the egg and cream. Also, I used a box of Pillsbury pie crust (is there anything else?), one on top of the other, as the crust. My elderly Dad saw the asparagus salad waiting to be served and claimed he was fully prepared NOT to like it, but he was the biggest fan! Thanks, Tyler!! They are always EXACTLY what I am looking for (well, I do add personal touches to make it my own ;) But, I always tell everyone who the base recipe came from and rave on and on about him. Ok, so here is what I did. I didn't use all cream. I put half whole milk and half cream. I also chopped up fresh dill leaves (about a tablespoon) and after sauteeing the onions and ham, I sweated about 3 cups of packed fresh spinach leaves. I also added shredded swiss chees. I have to warn everyone that there is too much batter for my pan (I had over 2 cups left) so with the left over pie crust (rolled out very thin) I put a bit in mini muffin pans, dropped small bits of ham mixture, a tinsy bit of cheese, some batter and garnished it with the tiniest of dill garnish. Baked uncovered for around 15 min (don't remember the exact time) they were adorable and wonderful. I will serve mini quiches at my next dinner party. Great for a brunch! It does take about 3 hours from start to finish. Maybe it was adding the extra ingredients, but this quiche took 2-1/2 hours to bake and I cranked up the oven to by 50 degress for the last 30 minutes to try and get it done! It was still slightly runny in the middle - but I had a hungry Mother's Day crowd drooling at the oven so I microwaved each cut piece for a few seconds and all was well. Although I made the crust as written, I substituted half lowfat evaporated milk, and half nonfat half and half for the cream. I also added spinach and tomatoes, both of which I thought were delicious in it. Be forewarned, though - it makes a ton of egg mixture! I filled a springform pan, and still filled an additional pie plate (without crust). My only issues are with handling pie crust. Why does it always break up on me when I am rolling? It turned out soooo delicious. My husband and I ate the whole quiche in three days. I think I gained five pounds. However, my husband felt he was grazing a bit much on the asparagus salad, but he loved the mint (he's Lebanese, they love mint in everything). Two coworkers who swore they did not like quiche tried it just to be polite...to my surprise, they gobbled up 2 generous slices and called me a master chef.
