I didn't use garlic but I did use kosher salt along with the pepper and it was delicious. I mixed all the ingredients in a bowl before putting them into the oven; just to make sure that everything was well-coated. The very unappitizing picture aside. The garlic burned in a 500 degree oven like others mentioned. I really liked the idea of seasoning with garlic olive oil and the spices as someone suggested below. But this recipe just kinda gave me potatoes (that were slightly seasoned with the obvious salt and pepper) with burnt garlic on it. Nothing special. The bad: the 500 degree oven burns the minced garlic to a crisp, and the potatoes are bland. I'd replace the EVOO and minced garlic with a good garlic olive oil, and sprinkle some dried herbs on the potatoes to give a flavor boost. |
