Substituted fresh ground black pepper for the cayenne/crushed pepper. Made them for a big BBQ bash, precooked them so at the party I just did the last deep fry and tossed them with the seasonings. They did not crisp up as I would have liked but they were so yummy it did not matter. We ate them all up. We will work on getting them crisper in the next billion times I will be making them for husband and kids. They weren't soggy or mushy because I turned them over halfway through, and then turned the broiler on for the last couple minutes. I found that the smaller fries were crispier than the thicker ones. I followed the frying directions exactly, except I don't like sweet stuff (brown sugar) on sweet potato fries so I used a little bit of garlic salt. They were great! If you add too many at a time the oil drops in temperature too rapidly and this makes the soggy. These fries are delicioso!!
