I was in New Orleans and purchased a box of beignet mix followed the instructions. They did not come out very good. I went online and found yours and tried it. They came out very well and very good.

I followed the directions however I decreased the proportions to 1/4 to make a smaller batch. My calculations we're precise yet I had to add A LOT of flour to get a biscuit dough consistency. They tasted ehh, pretty good. I've never had a beignet until I followed this recipe, so I can't say whether or not these were great beignets. I can say I'll try the recipe again and if they taste the same then it's safe to say for I'm not in love with beignets...

I've made many beignets out of the cafe du monde box mix so this was a first to try and make them from scratch. I don't know if I did something wrong but mine came out way too dense. I don't know if you can overwork the dough or if I should have sifted my flour. Gotta try and do something different.

The recipe was easy to fix, and brought smiles to the faces of the waiteress at work. The dough was dense, and rich. I added a little vanilla and powdered sugar to the recipe.

These were so easy to make and better than the mix I picked up in New Orleans. Rolling the dough a bit thicker made them not so dense. I also added some Vanilla. Will definitely make them often.

Really wanted these to work because I only have had fresh beignets once before. Maybe it was me,...but the finsihed product was heavy and dry...not like I remembered it. They looked so good on your show. Maybe I'll try again.
