Because of time constraints, I bought store-grated parm cheese and I think that affected the overall flavor and texture of the dish. I would try this again, hoping that it would turn out better than my first time. I did add pancetta, which was a nice addition. Very simple. I added leftover, deboned chicken (from Ina Garten's indonesian chicken recipie), some burgundy olives, ripe tomatoes and a tiny bit of mint. It was UNBELIEVABLE.
