This dish is soooo good! I tasted the sauce while I was cooking it but it didnt have much flavor, so I was afraid it would be bland. However, the prociutto really helps this dish coming together. I added a little bit of onion, but it is probably not necessary. Definitely recommended!

If you are experienced with a bechamel sauce this recipe should be classified as easy. Very tasty. Use a nice fontina cheese and you'll be rewarded.

When I first attempted this recipe I was a little intimidated, because It was for intermediate cooks and I was a beginner. I shouldn't have worried! It turned out amazing the first time, and I swear, my Husband fell in love with me all over again! Not only was it melty and cheesy, but it wasn't overwhelming in flavor, and the saltiness of the prosciutto really added a wonderful depth to this simple dish! This recipe is, bar none, the show stealer whenever I give a dinner party or have guests. I highly recommend everyone try this recipe at home, even picky children are bound to love it! And the best part? From start to finish this recipe only takes about 45 minutes!

Ignore every single one of those average reviews. This is my first time making this dish and i was greatly looking foward to trying it. I must say, it is absolutely delicious. The sauce was so creamy, and the fontina cheese(which i have never had until this dish) was wonderful. Great flavor of the cream and cheese and it tasted great with the prosciutto. I sliced the meat into bite sized peices so it wasn't too big. Please don't look this recipe over, make it and its worth it all!

Lovely dish that can be made in a pinch for a family dinner or even for entertaining. Be sure not to add much salt to the sauce as the saltiness of the meat really intensifies during baking. A must have in any recipe box!

Very easy to make, yet very delicious. I used Ultra Skim Milk, and about four slices of prosciutto, which is all I had left in the fridge (would have liked more). Used freshly grated nutmeg (never tried that before, but I saw whole nutmegs used in so many FN shows that I splurged on a jar and was glad I did.) I'm sure Ultra Skim v. whole milk changes the taste a bit and/or the consistency, but we are more comfortable with it.

I didn't have fontina cheese and substituted it with gruyere and parmesan. It was so flavorful! I've made it with the fontina in the past and it's also been great. It's a family favorite. You must try it!

I was dissapointed in this recipe. I LOVE Giada and have made two othe bechamel recipies of hers that came out great. This one tasted like flour to me... I will try again and add more cheese. It was not as creamy as I would have liked. I made half with sun dried tomatoes in it for my veggie daughter and she liked the flavor. I have not given up on this recipe and will make again sometime...

I've been making this pasta since I first saw it air about three or four years ago, and it's become a staple at holidays, birthdays, potlucks, etc. Whenever I host a party, my family asks if there will be "pasta bake"! I often have to make two batches just to satisfy the masses. The ingredients can be a little pricey for families on a budget, but definitely worth it for special occasions, as it feeds an army. Also, if you're feeling cheap you can just substitute macaroni and a pound of shredded cheddar and omit the prosciutto, and you have the best mac and cheese ever! Very flexible, creamy, and delicious!

I made this as a main dish last night and was kind of disappointed. It was much more bland than I expected. I think I will use a more pungent cheese and pancetta next time. The prosciutto was nice. But again, a little bland. The dish was very good, it just tasted like something was missing. I definitely won't make it as a main dish again. I think I'll try it alongside the ham this Easter (with a few adjustments).

I made this dish for my family along with the veal milanese, and it was fabulous. I put in diced prosciutto instead of the sliced. This could be a meal in itself with a nice salad and some crusty Italian bread.

I made this last night, and my family ate the whole thing. I made a few changes, though, to save some calories. I used 2% milk instead of whole - the sauce came out thick and creamy. I had leftover asiago cheese, so I used it instead of the fontina and it was delicious! I also substituted the prociutto for turkey sausage. Excellent!

I was looking for a recipe EXACTLY like this that I could use w/sausage. I had some turkey/chicken sausage w/basil that I broke into chunks and pre-browned. I also had gouda cheese instead of fontina. Other than that, I made the recipe exactly as directed. The only thing I would add is parmesan/parseley bread crumbs on top prior to baking. Giada never fails me. Mile Grazi!!

I rarely give 5 stars to anything but this was outstanding. I have a "gourmet" grocery store near where I live and their deli serves a "macaroni and cheese" dish that I loved. This is almost exactly like it, only better! The prosciutto gives it that extra boost and the fresh nutmeg brings it home. Wow. This is a winner.

I tried this dish. It was delicious. It was filled with new flavors. I am a first time chef and I feel my dish tasted just as expected. I feel it was dead on. The only down side was that it was completely filled with new flavors and that is a little strange. They don't make this at Olive Garden, but maybe they should. Thank you for this recipe, Chef. I have been making this for the past 2+ years. I get tons of compliments and requests for the recipe. My 7 year old son asks for this for Christmas and his birthday dinner and at least 30 times in between!! As others have stated, I too made some changes based on family likes...diced ham for prosc. and parmesan for the fontina. Makes great leftovers!! You can't go wrong making this dish! The recipe seemed easy enough and I followed all the steps, but to my family it seemed as though the punch was missing. Maybe I did not use enough nutmeg. I will try again with some of the other ideas other users tried, such as sausage in place of prosciutto,(to salty for my family, and I think I will add more of the Fontina to the top along with a few bread crumbs for the crunch. I love all of the recipes that I have tried of hers, so not giving up, just going to mix it up a bit.

This is an easy and great item to make for a party. I have made it several times. My only advice is to never adjust the recipe and to serve right away. I made it once and didn't have quite enough proscuitto in my fridge so I used less then the recipe called for and it really threw off the flavor. Also, it's VERY important to serve right away and NOT let it stay warm in the oven as it dries out VERY quickly. I made this mistake once and the wonderful creaminess that usually hides inside the rigatoni's holes evaporated. I'll never make that mistake again. When made properly, it's soooooo good.

I just finished polishing off the last scraps of this. I made it for Mother's Day and it was a huge hit!! I was a novice at bechamels but this was SO simple! I agree that it is VERY rich but its so worth it. I added a little more fontina to the base and loved it! Also, I added the entire half pound of prosciutto which despite my love of it, I thought it was way too much...I'll cut down on that a bit next time but this is definately a keeper recipe!

If you're looking either for something really different and tantalizing, or something light, this is neither of those things. It is fantastic comfort food. The ingredients are wonderful and the prosciutto adds a perfect ribbon of flavor through the dish. I've made it several times, including for Mother's Day tomorrow. Fans of classic, creamy confort food will rejoice.

This is an easy and good version of a classic Italian baked rigatoni. I too added a bit more salt, pepper and FRESHLY grated nutmeg, which makes a big difference. I also added 2 TBSP. of fresh chopped sage to the bechamel and it was great....like I said a whole room full of older Italian ladies raved and asked me for the recipe. I am not Italian!

I make this dish quite a bit. I substitute fat-free milk for the whole milk and it turns out just fine without all of the fat calories. The sauce still gets thick. I also have added roasted chicken to this dish (the kind you get already cooked at the market). It makes a hearty meal. This dish is not bland if you season it correctly. Also, Fontina cheese can be a bit expensive but you can add shredded white mix blend (swiss, mozzarella, etc) and it is just fine.

I've tried this exactly as the recipe states, and, when out of the exact ingredients, with other cheeses and hams. It's just a delicious comfort food. I also use fat-free half and half for the sauce, and it comes out wonderful.

I made this for a dinner with a few of my girlfriends and they all loved it!! It was wonderful!! My store didn't have the fontina cheese so I ended up using a "Quattro Formaggio" mixture that Trader Joes had and it was perfect!

I made this for my family last week, and it was a big hit! My daughters are 5 and 2 and VERY PICKY! Even they liked it! I thought it would be hard to find the fontina cheese, but my local Walmart had it for $4.00! Easy to make and inexpensive!!!!! Made plenty of leftovers too! I definatly recommend.

My family enjoyed this recipe, but I did make some changes. My market does not carry Fontina cheese, so I used a shredded Italian blend of Asiago, Provolone and Parmesean instead. I also added some fresh chopped flat leaf parsley to the bechamel sauce to give it a "clean" flavor, as well as crisp bacon instead of prosciutto. It is a heavy meal, so a little goes a long way. I will make this again, as it is easy to prepare. Next time I might experiment a bit and add asparagus or spinach. As for the complaints about a bland taste, make sure you really salt your pasta water after it boils, and add plenty of pepper to your sauce. I felt the fresh parsley really helped with the flavor as well.

This was so delishious! My husband had 3 servings. Since we don't do well with cream sauces, Instead of the whole milk, I added 2% lactaid milk. And to cut cost only 1/4 lb proscuitto. It came out just great, and probably not quite as filling.

I would definitely recommend this recipe. I substituted canadian bacon for the the prosciutto. My family ejoyed it....very much a comfort food. My only suggestion would be to make half the recipe. It can probably feed 10 people and we are a family of 4....lots of leftovers.

After reading some of the other reviews, I went ahead and added about 2 teaspoons of McCormick Greek Seasoning Herbs to the bechamel sauce, and used cooked crumbled Italian sausage instead of the prosciutto. Came out wonderful! (I agree the sauce was bland before I added the herbs).

Did a test run on this one for my husband and his friend, and they raved about it! I'll definitely use this one to entertain. Next time I might add a bit of garlic powder to the sauce for an added flavor. It was so good, I didn't mind burning my hand when some boiling pasta water splashed on it! My 12 year old daughter chose this as her first recipe to cook for the family. Since it required a lot of tending (milk can burn) I helped her every step of the way, but in the end she was very proud of her delicious finished product. In my opinion it's a fancy "macaroni & cheese" that can be twisted in many ways dependent on what you use for the meat or instead of the meat (veggies!). A winner!

I am an experienced cook and found this recipe so easy and so delicious. Had to use domestic Fontina (Trader Joe's) but it worked. Have made it twice and will try good quality Black Forest Ham next time. Proscuitto gets a bit pricey. May also add a bit of Asiago as recommended by other reviewers. I agree that reheating it did not work well. So I ate the rest of the second batch cold/room temperature and it was wonderful. Probably only folks raised in the 1950's would think of doing this - try it and you might like it.

i enjoyed this quite a bit. my boyfriend didn't really, i think it was because the cheese stunk so bad when it was cooking. it turned him off. but i really like it. i used a blend of asiago, romano, and parm as well. and doubled the amount of cheese for more flavor. very cheesy. i also added chopped ham steak and asparagus.

This is yummy. I have served it several times already to universally positive reviews. For my vegetarian friends, I omitted the proscuitto and substituted blanched chopped asparagus. I used more Fontina than the recipe indicated. Also, if you like the crisp brown top, make sure to make this in a flat, wide pan instead of a round casserole dish, and cut the time back slightly. Gives more top surface area to brown.
