I couldn't get all of the stuffing ingredients in the cavity, but just placed the excess around the chicken. To get extra liquid for my sauce, I squeezed the orange wedges. I served this with a spinach salad with a simple lemon, garlic vinaigrette along with a toasted orzo side dish with kalamata olives and lemon. We drank a wine called "Red" 2003 by St. Francis Winery in Sonoma County. It went perfectly with the chicken. I had to add more bacon strips of course and I then covered it with cheese cloth. I also stuffed the cavity with a whole head of garlic, sliced and extra herbs. It took 4 hrs to cook, but my husband and I thought it was the best turkey we'd ever had. Be very careful with the cooking time with all that stuff crammed in the chicken. When I took the orange and onion out, the inside still looked raw so I had to cook it longer. Best to cut the stuff into smaller pieces and make sure it's not packed too tightly. The gravy was wonderful. I roasted some chunked sweet potatoes and apples in the pan with the chicken and let them finish cooking in the gravy. The reason for this suggestion is that the bacon splattered grease all over my oven and it really smoked up my kitchen. I had to open up all the windows (in February--in Massachusetts!) and remove the battery from my smoke alarm. Other than that, the recipe is great. I didn't think the chicken had any of the flavors it was stuffed with, it just tasted like a roasted chicken. I'm sticking with Michael Chiarello's Lemon and Rosemary chicken, it is way better. Admittedly, as I slathered the bird with the herbed butter I was thinking rather negative thoughts about mess vs end result, but I'm glad I stuck with it. The gravy is to die for! As others have said, it's a bit difficult to wedge all of the ingredients into the bird's cavity, but with persistence and a good knife, it is doable. Truly delicious.
