I've enjoyed many recipes from the Barefoot Contessa cookbook, this being no exception. Not exotic and not at all complicated. Have recommended this recipe to friends.

This was such a different way with beets. Impressed my family. Would have had 5 stars if I'd used fresh beets instead of canned. Will do that next time.

It looked great but didn't turn out well...

I really thought this recipe was going to be a great hit, but it was disappointing. I followed the instructions to the letter and was really disappointed with the result.

Gotta like beets.....

if you want to like this recipe. If you don't like them, why try this. If you try anyway, don't be surprised if you don't like it!! Conversely, my husband and I both like them very much--and this was a hit! I would never have thought to put oranges with beets, but this really works. I did notice that it was pretty sharp right after putting it together, but it was 30 minutes before dinner and by then the flavors had melded and were wonderful. The last couple of tablespoons will be part of my lunch today. To avoid a huge amount of leftovers, I did cut the amount of beets to one can, but I only cut the oranges and the dressing in half. Way to go!!

Absolutely Delicious

At first when I read this recipe I thought this was a strange combination of ingredients but loving beets the way I do I gave it a try. I am so glad that I did. What a wonderful flavor, and a beautiful dish. I will make this many times in the future!

I've actually never prepared beets before, but this recipe changed that. As recommended in the Barefoot Contessa cookbook, I prepared the salad days in advance and would recommend doing so. The end product was a light, fruity salad that presented beautifully -- a nice complement to the rich pasta dish with which it was served. I roasted fresh beets for the salad, but will probably try canned beets in the future.

Pretty Good

I thought this salad was pretty good. I used half the beets so the beet/orange ratio was nice. I felt the dressing was not acidic enough to compliment the beets. I will try again and use lemon juice instead of the orange juice.

Simple, yet tasty

I think this recipe is great! The onions were a little stong to me so next time I will give them a quick sautee before adding them. So good.

This is a refreshing salad that is very simple to make and can keep in the refrig all week. I didn't have raspberry vinegar and used wine vinegar instead. It tasted wonderful.

Beets, beets, and more beets!

You have to REALLY like beets to like this recipe. It's pretty much all beets and it makes a huge amount. As a household of one, I'll be eating it all week--at least! Flavor is ok, but really...it's just all beets!

Excellent flavor!

We love beets, and this was a very nice dish. I used steamed, fresh beets instead of canned. I think it was unfair for people to give this recipe a low rating just because it had a lot of beets - that's exactly what it was - a BEET dish!

Nice balance of flavors

I really liked this. The red onion is great with the oranges. I didn't have raspberry vinegar so I used balsamic and I liked it a lot.

OK but not great

I halved the recipe since I'm the only person in the family that likes beets. It was OK, but like other reviews, it's just a lot of beets! A few bites go a long way. The orange was a nice touch, and I found that adding this to a salad was very good, especially with a nice vinagrette.

I learned to appreciate beets....never really cared for them but this recipe makes them taste sweet and yummy. Ina is right, the flavor gets better over a few days in the fridge. Worth a try if you don't really like beets.
