Other recipes seem to dry them out or not cook them enough. I did not use the rosemary though. They were even better as leftovers because the flavor of the oil and garlic was stronger. My husband doesn't like rosemary and so I substituted parsley, but other than that I prepared them as written. They were plenty flavorful without having all of the butter, sour cream, etc. of your usual baked potato. My potatoes were a little smaller and so the baking time was less, so I checked them after 10 minutes of the final baking time and they were perfectly done. Nice and crunchy on the outside and perfect on the inside. I didn't have any rosemary but they were tasty w/out it. Great recipe to play with spices. I served them with oven chicken fingers and ranch & spicy bbq for dipping. I will definitely be making these again. The wedges are big and flavorful, crunchy outside, moist inside. I think it would be helpful to change the wording on the baking time. (I thought it was for a total of 30-35 minutes because it says to bake it for that long then "turning to the other cut side AFTER 20 minutes". What it means is bake for the 30 to 35 minutes then turn to the other cut side for ANOTHER 20 minutes. When I noticed in the recipe summary the cooking time is 55 minutes, it made sense.) Other wording being a little confusing, it's an easy recipe and a great accompaniment to steak.
