I followed some of the other reviewers' advice and added cinnamon to the custard mix and also made a sauce of sugar/butter/cream and vanilla on the stovetop. The texture and moistness of the pudding was perfect. It does take awhile to bake, but only a few minutes to put together the ingredients. However, this time I wanted to change the flavors up a little, so I omitted the raisins and substituted 1 cup of white chocolate chips and added 1 cup of fresh raspberries. Also, I used Emeril's bread pudding recipe for his White Chocolate Creme Anglaise to flost this in. I served this for Mother's Day Brunch, and I had one happy mommy! My only word of warning is make sure your pan is large enough to accommodate all these croissants, and that your bain marie can accommodate the pudding pan. I had to improvise for the bain marie; I lined a rimmed cookie sheet with heavy duty foil and folded up the sides high to meet the pudding pan. Make sure you place the pudding in the bain marie and put it in the oven BEFORE you pour the boiling water in. It's a bit tricky to do this while the pan is in the oven, but well worth it not to have to carry the pudding in a bain marie full of boiling water over to the oven. I could not get Croissants, so I found a big beautiful loaf of Challah and used it instead. It was amazing! I will definately try it with the croissant next time. For a incredible topping, heat 1 stick butter with 3/4C sugar and 1/2C heavy cream(or half and half) and 1tsp Vanilla to a boil for 3 minutes in saucepan, turn off heat and let sit for 5 minutes to thicken. I even half the recipe and make it in my Cuissinart Convection toaster oven. It works slendidly! I have always loved bread pudding, and can still recall the way my grandpa made it when I was a little girl. I have been baking since age 12, and never mastered this dish until Ina came along. . To those who mention it being tough, I would say that either there was a problem with the croissants used, the oven temperature, or you didn't use the water soak. Follow the recipe and it will be divine. Also, use good ingredients! Even for my first time, it was very easy to make and even easier to keep eating. Just cook it well because it will be soggy in the middle if you undercook. My husband (and his office) said it was the best they have ever had and all wanted the recipe. I did add a little cinnamon to the custard before pouring it over the croissants. I also served it with a caramel custard sauce. It was great warm, but, also very good cold. After I uncovered the pudding it only took 20 minutes to cook in my oven to be set and golden brown. I think it was the fact that it was made with croissants that was the problem- croissant breads do not soak up as much of the custard misture as other breads. In addition, it did not have an accompanying sauce, which makes the bread pudding look a little naked. Also soaked raisins in Grand Marnier. Used a 9 X 13 pan which worked fine. Biggest problem was tenting the dessert properly. Dessert rec'd many rave reviews. My mom suggested next time serving with sauce, so I may try Giada'a Amaretto sauce but will substitute Kahlua or Frangelicco. Will use same liquor to soak the raisins. I did not use the raisens since Im not a big fan of them but instead I used dried cranberries one time, another time I used dried cherries(which were sweeter than the cranberries.) And then I added mini chocolate chips with the dried cherries. My favorite was the chocolate and cherries. My next one I will try dried apricots. I suggest not to cook it too long after you remove foil or the top will become hard. This recipe is WONDERFUL! Everyone loves it!!!! It's certainly not for the faint of heart (I can't imagine the fat and cholestrol)but, hey, it's the holidays! I thought the custard needed more flavor so I added about a tsp. of cinnamon and 1/2 tsp. of fresh grated nutmeg - the fragrance perfumed the whole house. Served it with a healthy drizzle of homemade caramel sauce. It's soooo easy and easily eclipsed the rest of my labor intensive holiday feast. The ease of preperation helped immensely in a day filled with other tasks. I was able to prepare it in the morning and store until cook time.Once the turkey was out, we popped the Bread Pudding in, and it cooked a little shy of the recipe time, apx. 70 minutes(my oven runs a little hotter than some). The texture and the taste, perfect. I also added a little a little mixture of spices (cinnamon, fresh nutmeg, all spice) to add just a hint of christmas spice. I was pleased it worked the first try. Dont let all the half and half and eggs frighten you. This is the best bread pudding, period. I dont care for rasins so I decrease the amount and added some nuts. I also did not put all the sugar in. Nutmeg also goes well along with just a little vanilla.
