I have just started contributing to family holiday dinners and this one defintely made me seem like a pro. I made it for Thanksgiving and Christmas. It is amazing over mash potatoes, turkey and stuffing. This is definitely a must try. Note: puree the yellow onions in a food processor after cooking to remove lumps in the gravy.

I made this gravy to complement my Christmas turkey and Christmas rolled dumplings. I must say, this gravy was a hit. The caramelized onion gives it such character, you almost don't need the wine at all. I added chopped boiled eggs (it's a Southern thing to put boiled egg in gravy) and chopped giblets as well. It was so easy to do with such a wonderful outcome. This gravy recipe takes the prize in my book. It's easy and so gourmet!

This gravy was simple to make, easy to manage while finishing a turkey dinner, and super delicious. This was my first attempt to make gravy (a testament to its ease) and everyone agreed that it really made the dinner complete. I made my own giblet stock and opted to not add the liquor to the sauce. All in all, a great recipe and one I will certainly use again.

I needed gravy for my Christmas dinner, but I didn't have any drippings because I didn't make a turkey. I used this recipe using just chicken stock (and substituting shallots for the onions) and everyone thought it was fabulous!

This gravy was fantastic! My wife and I both agree that this is one of the best gravies we have ever tasted. I didn't have any cognac or brandy on hand and so I substituted whiskey. Thanks for a great recipe.

So good! Makes a ton and doesn't get all gross like normal gravy that's been sitting a while. Conac enhances the flavor without overpowering.

This gravy is absolutely delicious, and I would recommend it to anyone. It is easy to make, and I would suggest that people double the recipe if they are entertaining. I did not add any turkey drippings and I used Wolfgang Puck's vegetable stock, so the gravy could be vegetarian. This was the best gravy I've ever had in my life!

This will be the only light (non-beef)gravy recipe I will ever use. I also used skim milk, and the result was still excellent. I also used a little extra Cognac and used a riesling for the wine ... a nicely subtle bit of sweetness for the turkey and slightly salty dressing. I, too, blended the mixture with a hand wand for a smooth consistancy. Very nice.

This was delicious and easy to make. Got teased a little about the "lumps" (chopped onions), so next time I will follow the advice of Anonymous on 12/10/05 and smooth out those "lumps" in a food processor first!

This gravy is delicious. You can't miss with this one. I made it for the first time on Thanksgiving and it was superb. It was so good I made it a couple of days later for the leftovers and it came out even better. THANKS SO MUCH!!!!

This was my best gravy ever! The white wine and the cream added a nice flavor to the gravy. I omitted the onion (because I placed an onion in the roasting pan with the turkey) and the cognac (none on hand). This recipe is a definate keeper!

I have made this twice and the second time I put the butter/onion mixture into the food processor after it was cooked.....we liked the consistency better than leaving them as tiny bits in the gravy and I think it also added more flavor to the final outcome. This is a great recipe, because like Ina says....you don't want to be making gravy in your party clothes!
