I made it for Thanksgiving and Christmas. It is amazing over mash potatoes, turkey and stuffing. This is definitely a must try. Note: puree the yellow onions in a food processor after cooking to remove lumps in the gravy. The caramelized onion gives it such character, you almost don't need the wine at all. I added chopped boiled eggs (it's a Southern thing to put boiled egg in gravy) and chopped giblets as well. It was so easy to do with such a wonderful outcome. This gravy recipe takes the prize in my book. This was my first attempt to make gravy (a testament to its ease) and everyone agreed that it really made the dinner complete. I made my own giblet stock and opted to not add the liquor to the sauce. It is easy to make, and I would suggest that people double the recipe if they are entertaining. I did not add any turkey drippings and I used Wolfgang Puck's vegetable stock, so the gravy could be vegetarian. I also used skim milk, and the result was still excellent. I also used a little extra Cognac and used a riesling for the wine ... a nicely subtle bit of sweetness for the turkey and slightly salty dressing. This is a great recipe, because like Ina says....you don't want to be making gravy in your party clothes!
