I used skinless chicken thighs instead of cutting up a whole chicken (easier) and unfortunately could not use the olives because my family would have balked. Otherwise I did not vary and it was so delicious. A friend who was visiting while I was cooking it asked if she could stay for dinner. And it was fantastic as well as easy to make. The amount of saffron is right on and the red peppers really brighten it up. I'll add this one to my dinner repertoire.
