I used 10 eggs (instead of the 6); 1 3/4 cups half and half (instead of just 1); substituted smoke deli ham for the sausage; 5-Cheese Texas Toast; and added diced green and red peppers. My overnight guests and I needed to be out of the house early so this allowed me to serve them a delicious breakfast with no fuss. Definitely will make again. However, I used the recipe-recommended number of eggs and the Texas toast absorbed all the eggs by the next morning. I baked for the time stated in the recipe and the bread was soggy. I won't be trying this recipe again. I don't think one should have to adapt a recipe as others did to make it "turn out". We baked it for one hour at 350 and it came out light and puffy. Coming from the ref. to the stove, 30 minutes is not enough time to set the eggs, especilly if you are using the extra eggs as we did. I cooked the casserole for 35 minutes, removed the cover and cooked it for an additional 10 minutes - it was perfectly done! I baked it at 350 in my convection oven for about 45-50 minutes and it was perfectly done. The only further adjustments I would make to this recipe would be to more generously butter the pan, as mine stuck to the bottom a bit. Also, I would cover it with foil at least for part of the cooking time. My guests loved this, and I was asked for the recipe after the first bite! I was a bit concerned when I took it out of the fridge to bake the following morning as it looked kind of dry, but fear not - it came out great! I will definately make this again for brunch potluck. After making this version I think I like hers better. Don't get me wrong, this is still a great casserole but the consistency of the texas toast was not as good as bread crumbs would be. This was also much more rich than what my family is used to eating, next time I will use turkey sausage and season it myself, milk instead of half & half and I may switch to lighter cheddar cheese. I made 2 smaller casseroles which was fine for my family of 4. We had the first one as a Christmas morning indulgence and are about to have the second one New Years day, in a few minutes. After reading reviews I added 10 eggs and used bacon( a combo of turkey and real smoked bacon which I had in the fridge. I did not have green onions, so I substituted red onion and it was fine. I did cook it longer about 55 minutes. I think I cooked it a little longer than needed. Next time I would just cook for abuot 45-50 minutes. Even though I cooked it longer, it still tasted great. I used 4 real eggs and Egg Beaters to equal 8 eggs. After baking covered for 30 minutes at 350 I removed the foil and the center was not set. I bumped the heat up to 400 and baked it another 10 minutes. I could tell the outer edges were done, but the middle was still to wet. By the time I got the middle set, the outside edges were too dry.......I think it would have been very good if I hadn't over baked it trying to get it set. Based on other reviews, slightly amended it by using 8 eggs, 3/4-c half and half, 3 tbsp. green onions, turkey sausage and combined both cheddar and pepper jack cheeses. Baked 30 mins. covered at 350, then removed foil and baked another 10 mins. at 400. Check that last time depending on your oven. I did add more eggs, (8) and some additional spices and a little more green onions, and followed the cooking time of 25-30 minutes. After that time, it was not set, so I kept putting it back in the oven to bake more at 10 minute intervals. I think I baked it at 350 for a total of about 45-50 minutes covered, then bumped the heat up to 400, took the foil off and baked it more for about 10 minutes, that was all it needed. When I make it again, I will bake it for about 30 minutes on 350, then take the foil off and finish at 400 until set. I took it to work, it was all gone! Wonderful and easy to make! Thanks Emeril!
