Too sweet and REALLY rich/filling (even though there is very little fat here). Good onion flavor and very edible - it's just nothing spectacular. Overall, I would have to say the final product does not justify the effort I put into this recipe - and the effort I will have to put in tomorrow to get the burned onion off the bottom of my pan :( Although, hard scrubbing probably wouldn't be necessary if I owned an electric skillet...

The soup was simple to make, just a little time consuming waiting for the onions to cook down. I added double of the broth so to make it more soupy then oniony. It makes a TON and everyone loved it, not to mention the neighbors could smell it cooking from my house and were very envious.

This is a great soup, if you actually follow the directions. I looked through all of the reviews, and it appears the 90% of the people who didn't like it didn't actually make AB's soup! There is a reason why you keep the skillet hot: you are caramelizing the onions! If you turn it down, you are merely sweating them and don't get the good flavor! Other people seem to have decided to make changes to the recipe and then wonder why it didn't turn out well. Please only review a recipe if you actually make that recipe, otherwise your review is useless!

Was overall dissapointed with the favor of the soup. Bad flovor seemed to be coming from the apple cider. I found it caused bit of a bitter after taste. I think next time I will omit the cider.

What a disappointment after 2 hours in the kitchen! I love French Onion soup and was excited to try this recipe and have followed it to a T. The results were horrible! Not even close to what it should be. One word SWEET...imagine candied onions! I wish that I read the reviews before I made it! Yuck :(

This is the first of Alton's receipes that our family has made. We opted out of alot of the pricey options, though. Here's what we used: 2lbs yellow onions 2 10 oz cans beef consume 2 14 oz cans chicken broth 1 14 oz can water a splash of some goobered up soy sauce half a stick of butter bread cheese That's about it. I sauteed the onions for close to an hour in the butter till they were soft, I didn't want them burnt as Alton had his. I also fiddled with the liquid ratios and options. Also improvised on seasonings. I'm very happy with the outcome- though Alton led the way and pointed out the "how-to's" for us... :o)

Excellent recipe! Insted of using sweet onions use the optional recommendation of mixing sweet and red onions to lessen over sweetness. And to make it even better, use Bragg Organic Apple Cider Vinegar in smaller portions in replacement of unrefined apple cider. It gives it a little kick! Try it you'll love it!

The first time I made this soup, it was a little too sweet. The next time, I swapped half the cider for more broth instead, and it was much better. I did use all sweet onions, so maybe half red would help. I love how oniony it is, but my wife prefers more broth. I think I'll up the broth by about 25% next time. Overall, a great soup, and the kitchen smells WONDERFUL while it's cooking.

This has WAY to much sugar in it; even with half sweets and half reds, along with the removal of the cider. I have made onion soup many times, and this was my least favorite. With onion soup simple is better, yellow onions, good stock, reduction, a little wine and liquor and all is good.

This is the only onion soup my wife will eat, and our child loves it, too. I used a German Riesling for the wine, and it was unreal. It is time consuming (using an electric skillet set on simmer), but otherwise easy, and well worth the wait!

I modified this one a little because I attempted to make the soup without the cider (as I didnt have any on hand). It came out very, very nicely even with dried herbs in place of a fresh bouquet. I highly recommend this one, although it does take about 2+ hours to get it to come out just right.

The soup was very good but a bit too sweet. Next time I would use all Spanish onions instead of the mixture. I even cut down on the sweet ones and it was still a bit too sweet. Don't get me wrong it was very good and smelled delicious when it was cooking. This recipe is saver.

I have made AB's french onion soup several times. Although I limit the amount of wine, I haved found this soup very good. I wish others who have made this soup and have critized the outcome would have read the recipe more closely. Use Apple Cider--NOT VINEGAR. How an inept a cook can you people be? Also, if the onions have to much a hint of sweetness...add a bit more cider. If this simple recipe it to difficult for you novice cooks, stick to boling water.

Modifications: I used low salt broths from store First the good: the onions are VERY TASTY just by themselves. If you want grilled carmalized onions stop before the wine is added. I would recommend the following changes: 1) Completly removing the cider it was too sweet or replace with water. 2) Increase the broths to 13 oz each at least. 3) Consider full salt versions of broth.

I tried to follow AB's recipe as closely as I could. I did not, however, have the apple cider and chose not to go to the store to buy it. Instead I increased the beef and chicken broths. It was RESTAURANT QUALITY - that was the concensus of my family. I cut the recipe to serve only 3 and it didn't affect the quality: 3 Vidalias, 8 oz each of the broths (made a little more liquidy but the bread soaked it up), 1 C white wine. Also, I used a cheap electric frying pan (not the nonstick kind) and as a result burned a lot of the onions and had to pick them out - so I won't do that again. Instead I'll try a deep cast iron frying pan next time and keep an eye on it.

I followed this pretty much to the letter; 4 Vidalias and 1 red. Even bought an electric skillet for the job. Used Barefoot chardonnay and Hennessy Cognac. Had the episode on the tivo, and while there were a few differences between that and what's printed here, I didn't notice any major changes. I know it's been said plenty of times already; it was just too darned sweet! I'm not giving up though. Going to try it again with less Vidalia... maybe substitute 2 yellow. And I'm getting a much drier wine. I'll post an update when I do. Oh, and for what it's worth, the house still smelled strongly of onion 4 days later!

The first time we made this, we didn't let the wine reduce enough. Learned our lesson and tried again after a few months. We decided to leave out the cider and substitute water instead. Even so it's a sweeter french onion soup. We likes ours to be more salty and/or savory, so leaving out the cider is a good idea. Otherwise it is perfect. Topped with one round crouton and a slice of smoked gouda.

I cant even begin to say how FANTASTIC this soup is- from the very beginning of sweating the onions to the laste taste in my bowl, this is truly the BEST french onion soup I have ever had- and its so so simple!!! I didnt have the apple cider, so I just used a cup of plain old apple juice!! and i omitted the bouquet garni- otherwise it was followed to the T- use all vidalia onions if you can get them.. you will NOT be disappointed with this one- way to go Alton!!

Like some others I thought this was good, but a bit sweet. If I made this again, I might reduce the apple juice by half. Also for me, the taste of the white wine was a bit distracting. Maybe just a bit too much taste going on here. Other than that, it came out quite well.

Wonderful soup! Based on some 'sweet' reviews I used half yellow onions and cut back on the apple cider. Swiss slices and mozerella were either too hot or too chewy but either way this nice rich soup is.... "GOOD EATS"!!!!!!! Enjoy.

Sorry, Alton, you missed it on this one. The apple cider made this way too sweet. I hate that I wasted 5 Vidalia onions on this, since they are only available a short while. Might be ok if you substituted more chicken broth for the apple cider.

I used yellow onions and followed the recipe exactly, except I used unfiltered apple juice rather than cider. (It's May; that's all I could find.) The soup has lots of flavor, but it turned out a bit sweet for my taste. I would use an ale rather than the white wine and reduce the ratio of apple juice/cider to the beef and veggie broths next time. Otherwise, a wonderful soup. Always enjoy Alton's recipes!

This recipe is wonderful. I would not change anything. I read the reviews and don't understand the people that state, the apple cider vinegar ruined the recipe. I have read and re-read the recipe and can not find anything in there that states the use of vinegar. Maybe you would like it more if you used cider like what the recipe called for like the unfiltered kind and it is wonderful. Make sure that you do not use frozen or from concentrate apple cider, because then it is too sweet. If you used that kind before try it again with real apple cider (not from concentrate) and you will see the difference.

Overall, I thought this was a good recipe. I mixed sweet and red onions. I also found that 300 degrees in my skillet was too hot, so I turned it down to about 225, and partially covered to sweat the onions. I like what the cider is meant to do, but I think next time I would decrease it to 1/4 to 1/3 cup and use more beef consumme. I am cooking for 1, so I don't think I will keep the leftovers this time. I hope the next try will result in something a little closer to what I think of when I think of french onion soup.

I can't believe that anyone would say that this recipe is too sweet or that the reminants of the cider or the wine over powered the onion flavor. Using Vadalias, this recipe makes them shine with a distinctly french accent. It's like the onion went to finishing school. If you're scraping dead onion off the bottom of your pots, something is wrong...Mahogony does not lok like charchoal

We love Alton but this recipe was not what we hoped for. If I try it again I would increse the beef consomme' and leave off the apple cider vinegar. The cider vinegar ruined it.

If you are able to see this episode then you will truly understand when AB talks about leaving the onions alone. I dont have an electric skillet so i used nonstick pan and set the heat on med-low. Set your timer to 15 min and stir them each time it goes off. Some of you complain that its too sweet. I though it was a little bit so to set off the sweetness from the wine & cider by adding an extra can of both broths.(i dont think i cooked the wine long enough letting it reduce) The extra broth doesnt take away any flavor, plus i liked mine a little more wattery than thick from all the onion.I would highly recomend using an electic skillet outdoors, leave the house and come back an hr later and you will understand.

Maybe it's me, maybe I used too strong a white wine, but the whole thing was a bit too "winey" for me and my kids. The taste really seemed to overpower the onion. It made for a hard sell with my kids, even with the bread and cheese. Also, I had to add some granulated garlic to cut the over-powering flavor of the wine...Won't use this recipe again.

I followed the recipe to a T and it was way too sweet. It was unedible (although my 2 1/2 yo and 14 month old loved it). Just not my type of flavor

this recipe turns out okay after a few alteration. after reading the other reviews i left out half the cider and was glad as it was still sweet. at first bite it was wonderful, but it got a bit overwhelming the more i ate. also, next time i will add more broth as i like my soup with more of a thin base. a good soup that was a bit much for me, but is good after some tinkering. love ya A.B!

This recipe is AWESOME. It makes 4 servings. I would recommend a dry white wine (chardonnay). We used a sauvignon blanc and it was just a tad sweet. So awesome, though. So awesome.

I liked this recipe and I think Alton is a genious. But this is not his best. I followed the recipe exactly as it apears. It was better when we had left-overs and added water to make it more like french onion soup than french onion stew. Other than that, It was fun to make.

I've never been a big onion fan, or maybe I never really gave them a chance, but this soup changed all that. I made this for a large group of people who were constantly putting in their two cents about how many onions were in it. When all was said and done, there wasn't an unsatisfied stomach to be found. One word of advice, add the cognac when called for. If you put it in last, like I did, the bread will soak it up and you will have a fairly powerful "flavor."

This recipe was great, just be sure you get the right kind of cider. The first time we made it, the soup came out extremely sweet. Even though the label may say cider, be sure you get unfiltered (the kind that looks cloudy). Makes a huge difference.

I usually enjoy AB's recipes, but this doesn't work for me. I've tried it twice and both times it's come out very bitter and generally unpalatable. The Betty Crocker cookbook version works much better for me, I stick to that but I use Altons method of sweating down the onions.

I followed this recipe as a kind of experiment, as this differs from my normal ingredient list. The cider was a nice change of pace, but the beef consume made the soup greasy and saltier that I ever though humanly possible. I threw it away. Then I made it my way- vegetable stock (I know this is blasphemy, but I just can't handle the saltiness of beef broth, sometimes I use low salt, low fat beef broth and that's okay) with the addition of about half the amount of cider. If your bouquet garni, which I hate tying, is being a pain, just stick it in a tea ball. Problem solved. Note: If you're reading this thinking that I spent four hours making French onion soup.........you'd be right.

Based on comments from others, I reduced the Cider to 3 oz. and increased the chicken stock to make up the difference. Turned out with a nice flavor perhaps a bit fruity from the wine but not overwhelmingly fruity.

I've made this many times and it has never dissapointed. The wine needs to be dry and light and don't go overboard on the apple cider, but you need both. If you don't have the electric skillet, buy one first. It is wirth the cost of the skillet.

I was very disappointed with this recipe after spending an afternoon making it. The wine was too strong and the apple cider made it way too sweet. I had even split the onions evenly between sweet and red in the first place. The onions caramelizing smelled wonderful, I think I'm going to substitute beef broth and leave out the cider next time I try this. Or find a different recipe.
