Better than Mom's! 12/31/2006 at 03:24pm User: Anonymous User Rating: Despite being from the South. I was not born with the "biscuit" gene, these are easy and foolproof. My husband could not believe I made them :) I have even substituted this recipe for Dumplings in my mom's chicken and dumplings recipe. Sorry Mom, but A.B.'s got one over on you here! it sucks 12/26/2006 at 04:03pm User: parnthia from west palm beach, FL User Rating: I tried to make this for my southern inlaws from mississippi and of all times Alton fail me was then. The biscuits did not rise. They were flat and crunchy the only positive was that they were flavourful Great Biscuits 12/25/2006 at 05:08pm User: Michael from Newport News, VA User Rating: Easy to make and taste wonderful!! Very traditional biscuit Awesome & Easy 12/23/2004 at 10:33pm User: ERIC from Chicopee, MA User Rating: I have tried to make biscuits in the past and came up with bread based hockey pucks. This recipe is very easy and the biscuits come out tender, and wonderful. One key is not to over work the dough. I refrigerate the butter and shortening and use a hand dough cutter to work the fats into the flour, just like doing a pie crust. The buttermilk makes them wonderful. I made them with fried chicken and potatoes & gravy, my wife and kids raved. Easy to make, Fantastic Taste - thanks AB 12/05/2006 at 11:55pm User: Elizabeth from thou, CA User Rating: The best thing about these is that it's easy to keep the ingredients on hand so they can be made any time you have a craving for biscuits! I live in SoCal, so I add 1 tbsp. extra buttermilk, since the air is so dry here. Also, I like to use an egg wash on top for shine. I make double batches and freeze and bag them. They're much better tasting (and better for you!) than the store bought whack-a-dough biscuits. Perfection 11/28/2004 at 07:03pm User: JULIE from Madison, WI User Rating: Very light, tasty and excellent. Lots of fluffy layers. Very nice texture 11/24/2004 at 12:08am User: JEFFREY from Linden, NJ User Rating: Good recipe... but I had to add a bit more flour. Dough was far far too sticky to be rolled out or worked with. Probably added between another 1/4 and 1/3 of a cup of flour. Other than that... recipe turned out better than I had hoped. Can't mess this one up 11/18/2007 at 11:12pm User: Erika from Millbrae, CA User Rating: The biscuits were fluffy and as great as basic biscuits can get. Hmmm... 11/17/2006 at 08:10pm User: Akino from Woodside, NY User Rating: So I made these biscuits today. And Im a bit ambivalent. Did anyone else find the biscuits salty? and floury? Hmmm.. Im what you would call and yankee so I havent ever had REAL southern biscuits so maybe some one can put me in my right place but.. yea.. a lil salty/floury. Any tips? or is that how they are supposed to be. Im looking for a real nice buttery a la KFC biscuit. Yes I know thats probably a sin in the south to strive for fastfood biscuits.. but I think theyre buttery and tasty :p From an 8th gen. southern lady 11/14/2006 at 06:31pm User: Jan from WOODSTOCK, VT User Rating: Absoutley horrible. Too greasy not enough rising agent. For true southern biscuit do not use this recipe. awesome 11/13/2006 at 10:16am User: Tabitha from woodbridge, VA User Rating: just like my grandmother use to make Biscuit heaven 11/10/2005 at 07:50pm User: Jacinda from Sammamish, WA User Rating: Every time I have attempted to make biscuits, they have turned out like hockey pucks! Well, never again, thanks to AB! These were huge, flaky, and looked just like the biscuits you get from the tube at the grocery store. Absolutely wonderful recipe! Thank you, Ma'Mae! My Biscuits are no longer discuits 11/09/2004 at 10:37pm User: MAUREEN from Hillsborough, CA User Rating: Thanks AB! Basic, Simple , easy to follow. 10/31/2006 at 12:23pm User: William from Chicago, IL User Rating: I love this recipe, becasue it is as my title say's. I like a lot of Alton Browns recipes, becasue: 1. they have tested and if you follow directions, your product will be exacly as he displays it. 2. Recipes are simple and there is not guest work involved. easy easy easy 09/30/2004 at 09:48pm User: Anonymous User Rating: In true Alton Brown style, these biscuits are SUPER easy to make and require a minimum of dirty dishes. Better than the things in a can, too. Way better. delicious! 09/30/2004 at 08:11pm User: Anonymous User Rating: These are fabulous. They are fluffier than the previous buttermilk biscuit recipe I used. Kelli, maybe buttermilk biscuits aren't your thing, but they are supposed to be a little tangy (due to the buttermilk). I love that taste, but maybe not everyone does. Southern Biscuits 09/24/2005 at 06:29pm User: Anonymous User Rating: Fast, easy, and delicious! They are super pretty, great for entertaining! I would recommend eating them with honey or jam, they taste especially good! Yum 09/17/2006 at 02:09pm User: Susan from Overland Park, KS User Rating: I have tried to make biscuits with several different recipies and they always turned out dry and hard. These were perfect! Light, fluffy and very easy to make. Was it me? 09/15/2004 at 10:06pm User: KELLI from Gonzales, LA User Rating: Recipe was easy and the biscuit texture was great but there was a tang to the biscuit that I didn't like. Maybe it was the cook...? real biscuits 09/13/2006 at 10:06pm User: Stuart from Goltry, OK User Rating: These are the only biscuits you ever need to make. Anything from the store, or your grocier's freezer is just a waste of taste... Sheila 09/10/2006 at 04:15pm User: Sheila from San Antonio, TX User Rating: good AWSOME BISCUITS 08/26/2006 at 09:02pm User: sheree from santee, CA User Rating: These biscuits were perfect. When they came out of the oven I put a little butter on the crust to make them shine. A big hit!! I guess I made mine bigger than 2 inches, because it only made 5 really big biscuits. No problem for us! Don't change a thing Finally! 08/26/2005 at 01:57pm User: Roma from Omaha, NE User Rating: Over the past 30 years, I think I've tried every biscuit recipe I've ever seen without much success....until now. Alton, I can't thank you enough!! This makes the most perfect biscuit. Love you! I make these... 08/05/2007 at 09:14pm User: Anonymous User Rating: every time I make biscuits, it is a great recipe! Easy and quick 07/26/2006 at 12:51pm User: Anonymous User Rating: These were delicous! Served them with Chili.... good biscuts 07/19/2007 at 06:04pm User: Anonymous User Rating: mama would be proub can they be ANY fluffier? 07/11/2005 at 04:14pm User: Lisa from Encinitas, CA User Rating: Again, I use this recipe for something other than just plain old biscuits -- we make a filled dumpling that is baked before served over rice with a cream sauce. I have tried lots of biscuit recipes in the past for that meal, but these were voted the best by my family of picky teens/tweens & toddlers who were raised on this meal. Plus I can not tell you how many we ate with just a pat of butter melting in them as "appetizers". Excellent 07/04/2007 at 04:35pm User: KITTIE from Pooler, GA User Rating: Darn good biscuits! Del.icio.us 06/26/2005 at 09:19am User: Anonymous User Rating: Great biscuits - my 2 and 4 year make them with perfection! WOW 06/26/2004 at 12:16pm User: ROBERT from Belleville, IL User Rating: I have been taught that making good southern biscuits is very difficult. Not with this recipe! Easy, fast and really, really good!!! Good not Great 06/18/2007 at 03:03am User: David from Denver, CO User Rating: Although these were good (to some of the previous reviewers, if your biscuits didn't rise your baking powder was probably old) the best recipe for biscuits I have ever found is in the cook book "White Trash Cooking". It's perfect. These biscuits are great! 05/23/2007 at 09:02pm User: Anonymous User Rating: My family makes these all the time as they are so, so good!! =) wonderful but hard outside 05/21/2005 at 04:19pm User: Anonymous User Rating: I cooked them for only 12 minutes and they were still too hard on the outside. I will try 400 degrees next time; however, great flavor and flaky inside. Great Recipe! 04/23/2007 at 02:42pm User: lisaedin from middlebury, CT User Rating: I've tried a million different biscuit recipes and all I got were flat, hard, hockey pucks. I even tried the Paula Deen recipe that she makes along with chicken fried steak, same turnout. I do a lot of baking so I know i was using the correct tecnique. Now, finally a recipe that turned out great. I used a pastry blender instead of my hands, and I substituted buttermilk with one cup whole milk and a tablespoon of vinegar and I cut them into squares to eliminate scraps that have to be reshaped. Thanks Alton, I love your show. greatest biscuits ever!!!! 04/19/2008 at 10:42am User: Anonymous User Rating: tried this morning. they were light and fluffy. had to use bisquick instead of flour though. Scrumptious! 04/18/2006 at 05:40am User: Stephanie from Oak Harbor, WA User Rating: These were just great. I did reduce the salt by about a third, and used butter-flavored shortening instead of plain. I've served these with breakfast, lunch and dinner and they always go quick. The Best 04/08/2007 at 05:44pm User: Paul from Rochester, NY User Rating: Unbelievable when you follow recipe exactly. Can eat a whole batch by yourself! Outstanding 04/05/2005 at 08:23pm User: Anonymous User Rating: Whole plate disappeared very quickly. Superbly Southern 04/02/2006 at 08:19pm User: Tonya from Vacaville, CA User Rating: This is THE BEST biscuit recipe I've ever used. I know a recipe is a success when my 18 year old son can't get enough... Thanks, Alton. Tonya LOVED THEM... one tip 03/28/2005 at 03:18am User: Glen from San Francisco, CA User Rating: Delicious and easy... If you have a pastry blender(the hand held thing that looks like a mixture between a potatoe masher and something used for cheeze) It makes it much easier and you don't have to worry about melting the butter with you're hands Still trying 03/05/2005 at 12:03am User: KELLY from Del Rio, TX User Rating: I have made these twice now and it has been easy each time. The taste is OK, but I am still trying to get to biscuit Nirvana. My husband and I recently met Alton and asked him if the fame has gone to his head and he said that he's not trying to cure cancer, he's just trying to cure bad biscuits. And so I was inspired to begin creating in my kitchen laboratory. Even if the results are not the best, with each attempt something new is learned and thus I become a better cook. True Southern Biscuits 03/02/2007 at 10:10pm User: M'Linda from Round Rock, TX User Rating: As a woman who is proud of her southern heritage, I despaired when I realized that my Grandmother's biscuit recipe was no where to be found. This recipe allowed me to reclaim the right to call myself one heck of a southern cook! very delicious 03/01/2007 at 06:09pm User: TAMMY from waukesha, WI User Rating: We loved this recipe and will make it whenever we think about biscuits. Thanks AB awsome :0) Biscuit Heaven!! 02/27/2006 at 10:44pm User: LOWELL from Newport, NC User Rating: As long as you don't overwork the dough, you can't go wrong with this recipe. For Kelli, or anyone else who doesn't like the tanginess imparted by the buttermilk...omit the baking soda and use whole milk instead of the buttermilk. You now have superb baking powder biscuits. Try with fresh sweet butter and drizzle with real maple syrup, or molasses. Biscuit Heaven!! Perfect Biscuits 02/26/2005 at 08:18am User: JOE from allen, TX User Rating: Great recipe - no need to deviate. awesome 02/24/2007 at 02:40pm User: Anonymous User Rating: more on the easier side that medium...and they taste great Tasted fantastic, but did not rise:( 02/17/2008 at 09:49am User: Alicia from Kansas City, KS User Rating: I made these this morning for breakfast, and although they were the best tasting I ever had, they failed to rise like every other attempt I have made at making biscuits. Does anyone have a suggestion as to what I might be doing wrong? Thanks for any help and thank you, Alton, for your wonderful tasting recipes! Great! 02/13/2006 at 04:11pm User: Hilary from Eagle, WI User Rating: Tender, moist, great with honey- What's not to like? Yummy!!!!! 02/06/2005 at 07:56pm User: Anonymous User Rating: This were so easy to make, and turned out so delicious, they desapeared once I took them out of the oven. WONDERFUL!!! 02/05/2005 at 08:26pm User: HEATHER from North Pole, AK User Rating: I tried these biscuits last week for my family, and I have to say, they were the best I ever made!! Very light, and tender. Way to go A.B, Great recipe! Another AB homerun 01/27/2007 at 02:06am User: Jeana from Austin, TX User Rating: I'm not a huge biscuit person so when I first made these I thought they were good, but I wasn't raving over them or anything. My husband, however, is a HUGE biscuit person, and he can't get enough of these. He asks me to make them all the time. If that doesn't deserve 5 stars I don't know what does. Dog gone good. 01/21/2005 at 04:32pm User: ROBERT from Peachtree City, GA User Rating: Tried three recipes before this one. This one is best..hands down... Suggest you try to sift ingredients first, then use 1/2 inch to 3/4's thick when cutting. Great the next morning if bagged and then nuked. Easy to make. Use. "light hands' in combining ingredients. |
