I've used the Thanksgiving recipes from Good Eats for three years now, and they're fantastic! Using a roux makes fool-proof gravy, and it's easy enough to make that ahead of time and just keep it in the refrigerator. My only minor problem with this recipe is that the taste of the wine is a little strong for people used to a traditional bland gravy. But since I never get enough gravy out of a turkey anyway, I usually combine the gravy from this recipe with a small jar of store-bought turkey gravy. The store-bought gravy mutes the wine taste slightly, while leaving plenty of great flavor!

My family loved this gravy! Used it for turkey gravy. OK -- so I forgot to add the peppercorns and basil...but still, it turned out fantastic.

Be carefull don't add any salt like I did. Also instead of a turkey use the drippings from a prime rib roast, makes a wonderful beef gravy.
