Using a roux makes fool-proof gravy, and it's easy enough to make that ahead of time and just keep it in the refrigerator. My only minor problem with this recipe is that the taste of the wine is a little strong for people used to a traditional bland gravy. But since I never get enough gravy out of a turkey anyway, I usually combine the gravy from this recipe with a small jar of store-bought turkey gravy.
