I kept hearing how great red velvet cake was and finally decided that I was going to make it as my birthday cake. It was so moist and delicious. The only problem with this recipe was the fact that red food dye is extremely expensive. But white velvet cake tastes just as good.

super moist & delicious cake!...i added 2 teaspoons of cocoa, and i combined heavy cream with buttermilk...i'm new at baking so i've been experimenting with recipes and everyone who tried this one found it very delicious!...thanks!

Unless you over bake this, I don't see how it could come out dry. Mine was quite moist and light and just delicious. I've made it twice, but I hesitated making it initially due to some of the reviews. I wish people would not give ratings to recipes when they haven't tried the complete recipe. It makes for a false reading.

I have a few of Gale Gand's books and have had the incredible pleasure of dining at TRU. Everything I've ever tried from her books has turned out great. This is the first flop. I made two batches (seperately) for my daughter's class. Both batches turned out dry cakes. I had to slice the layers very thin and double up a more traditional cream cheese recipe (I didn't use this one) to make it palatable.

This cake is not dry at all! Had to of over cooked it for it to be dry. Frosting was excellent too. I took it to work for my birthday and everyone loved it!!

If you are a person who doesn't like cakes or sweets, then you're probably not the best person to review this cake. It was wonderful. If yours turned out dry, you probably baked it too long, or didn't properly measure the ingredients. The buttermilk and vinegar make it moist and velvety, and sifting the cake flour makes it soft and light. I have been daydreaming about this cake ever since I made it last week, and I look forward to making it again this week! My mouth is watering just thinking about it! Oh, and to anyone who complained about the color of the cake, you should probably not be making something called RED velvet cake, anyway; hello, that's the whole point! LOVED the frosting, too. Next time I will double it, even though I did have plently, just to have extra. Whoever suggested that, thanks for the great tip!

The cake itself wasn't bad, it was alittle dry, but still tasty. I was shocked at the amount of red food coloring needed, although this was my first time making a red velvet cake. It is impossible to get a paste from 2 ounces of red food coloring and a teaspoon of cocoa powder, I think I must have used a 1/4 cup or more of the cocoa powder to achieve the "paste". If you are going to use the frosting recipe, you might want to double it, doesn't make much, and VERY SWEET!!

I disagree with the other reviews; can't see how a cake with a cup of shortening could ever be dry. Love the icing; I get tired of cream cheese frosting on everything. This was great!!

I have tried many a red velvet cakes and this was by far the BEST! I followed the directions exactly except for I added another tsp of cocoa. YUMMY YUMMY YUMMY.... I'll be making this one untill I can cook no more.

I did not make the cake version of this recipe because I found another Red Velvet recipe that used canola oil instead of shortening. I'm not a big fan of shortening, so I didn't want to make it. I did, however, make the frosting. It tasted like a weak whip cream at best. I do not recommend making it- either make a cream cheese frosting or a basic buttercream.

This cake turned out wonderful! Just like the original Waldorf Astoria Red Cake Recipe. For all of you who are used to the cream cheese frosting -- that's not the frosting that was originally on this cake. I guess bakeries found it easier to just substitute the cream cheese frosting in lieu of making the cream sauce and letting it cool, etc. I know people who have never had it with the original, and in my opinion, must better frosting made with the cream sauce. Double the frosting recipe and beat until frothy and light. Yummy!

This cake was way too tastless and way too red it looked like a murder case with all of that red food coloring even though I used half of what the recipe called for. I don't ever plan to make this cake again.

This is the Red Velvet/Waldorf Cake of my childhood - I think this the best cake I've ever had. Anyone for whom I've made it goes nuts over it. They are stunned by the frosting - not so darn sweet, light as air. The cake itself is most moist cake I've ever tasted and baked - so I'm very surprised that some found it dry. This recipe is actually known for how moist it is. I've also made cupcakes using this recipe - my coworkers nearly broke out in a fight as they wanted seconds.

I was a little worried about making this cake because of some of the reviews. I have to completely disagree with those who said this cake was dry and had no flavor. It was delicious! I would recommend this recipe for anyone whether its the first red velvet cake you have had, or if you have been making them forever!!! A+++

The flavor was great! I added a about a Tbsp more cocoa powder and used red gel coloring instead of liquid. The color came out good. Overall the cake was a bit dry but it paired perfectly with cream cheese icing. I will make it again but will probably add something to help the moisture content and use 2 8-inch pans instead of 9-inch pans.

The icing used in this recipe is one that my aunts have been using for over 40 years, and was a great alternative to cream cheese icing. The cake is 100% old south and original. As to the coloring and making the paste; you can just add the dye and cocoa w/o pasting, and it will be fine. As to the color; again-VERY traditional!! If you are someone who doesn't like a red cake (there is a BIG HINT in the title) then find another recipe and don't downgrade the rating b/c you don't like red.

This is my favorite, and, I consider, original red velvet cake recipe. For the frosting, I use 5 tbs flour and a can of evaporated milk for a single recipe. However, when I make this cake, I bake it in 3 8" round pans and make a double recipe of frosting. Simply delicious. I've been making it for years and no longer use cake flour and just mix all the ingredients together except for the baking soda and vinegar, which I mix together separately and fold into batter last.

This cake is very very tasty but I have found that you should let the cake sit for one day after making it to experience the full flavor. I usually put cream cheee icing on top and pecans.

This is a wonderful cake with a perfect, not too sweet frosting. It makes a beautiful presentation. I am going to use this frosting for many other deserts as it could work for cakes, cupcakes and cinnamin rolls.

I thought the recipe was a little difficult to make i could not get a paste out of 1 teaspoon of cocoa to 2 ounces of food coloring should i have use a heaping teaspoon or what else could have been done maybe simplify recipe thanks, should say weather its a heaping or level teaspoon

This has to be the most delicious cake I have prepared. I am glad I didn't get overted by the few negative reviews. I didn't end up with quite enough frosting and will probably use 1.5 times the recipe next time, but the cake was moist and had an extremely unique flavor. Everyone at work raved that it was the best cake they had ever had, even my husband who is not much for sweets loved it. Thank you so much for this recipe.

I highly recommend wearing plastic or latex gloves when you make this recipe -- that red food coloring is a menace, and there is a TON of it. Do not make this recipe when you are rushed, be slow and deliberate or your kitchen will look like a scene from a murder movie! Wash all utensils very slowly and thoroughly, unless you want bits of dried coloring springing back to life the next time you use that spatula. Not sure the trouble is worth it -- this is definitely more about looks than flavor, but it sure is red!

This is almost exactly like my grandmothers Red Velvet Cake. It is rare to find a recipe that does not have a cream cheese icing (I personally don't like it with cream cheese icing, but most people are used to it so they tend to like it better). I'm glad to see this one out there.

I've never been a fan of red velvet cakes---never could understand what all the fuss was about until I ate this cake brought to my house by my mother-in-law. This is not the typical southern red velvet cake, but it is delicious. The flavor was wonderful and the icing (which is NOT a cream cheese icing!) was light and not too sweet. I'm having it for my breakfast as I read the reviews and downloaded the recipe so I could make it for New Year's Eve.

i've made this cake 4 or 5 times - always for a special occasion - it has consistantly been a big hit. i use a cream cheese icing and people rave. i was so surprised by the reviews here, that before i wrote this review, i double checked with my husband just to make sure i wasn't crazy. his grandmother made red velvet cake every christmas and he says this recipe tastes just as good as his grandmothers.

WOW. I am shocked to read all of the negative reviews for this cake. I followed the recipe to a T and my cake turned out moist (not dry in the least), fluffy, and absolutely delicious. The frosting was great too. My family absolutely loved it. I took the leftovers to work and my co-workers raved about it too. I actually got requests to make it again. This was one of my favorite cakes and I will definitely be making it again.

This recipe is just like our mom used to make. The buttermilk makes the cake fluffy. The whole family is enjoying a childhood favorite once again and my 6 year old son has learned how to bake it as well. This is the first cake I ever made from scratch and it takes a little more time. but is well worth the effort. I also use the icing recipe on other cakes as well.
