My family enjoyed it and in the summer when you don't want to start you oven, it saves on the heating. I did switch the Shake and Bake for Old London Seasoned Bread Crumbs, left the hash browns out because they become very mussy and added an extra pound of ground beef (only because size of my family), added an egg and additional onions. Other than that, this recipe was excellent. I changed quite a few things though. I used real potatos instead of the packaged ones which worked great b/c they weren't mushy at all. I only used 1 package of the shake and bake and not the whole box and I also added approx 1/2-1 cup italian bread crumbs b/c the mixture was really moist. I also used real mushrooms and not canned mushrooms b/c to me anything canned (except peaches) doesn't taste that good. Lastly I used low sodium cream of mushroom so that the dish wasn't to salty. The product of this recipe defies description. The potatoes were soupy, greasy, and tasteless. The meatloaf was pale and horrid tasting. There was no gravy - rather a watery and oily liquid. The end product looked nothing like the meatloaf prepared on Sandra Lee's show. First, I diced some potatoes and put them on the bottom istead of the frozen taters o'brien. Second, I used one envelope of the shake and bake instead of the whole box. Third, when I added the cheddar soup and evaporated milk mixture to the meat mixture I only used half since I only used half the shake and bake in the meat. I was pleasantly surprised how this came out. I thought the consistancy of the meat was good. The surrounding soup mixture, onions and m'rooms made a nice gravy. I read the reviews of others and decided to add only one envelope of the shake and bake, and I am glad I did. The only substitution I made was using cream of celery instead of cream of mushroom soup simply because my husband can not tolerate mushrooms. I agree with the other raters about the potatoes. They did get a bit mushy and soaked up some of the fat from the meat. So, if I make this again it will be without those potatoes. I also liked the idea of the meatloaf in a slow cooker. Mine did not fall apart. I used a little over 2 pounds of meat and cooked it exactly as she said, one hour on high, and 5 hours on low. Mostly due to the dryness I always encounter. I was watching the show (always desperate for something new) and this caught my eye. Unfortunately I didn't get it together early enough to use the crock pot, but I followed the recipe (using one pkt of stuffing mix, and pork sausage cause that is what I had, because that was what she used on the show) and baked on 350 for 1 1/2 hours. AMAZING!!!!! There wasn't one piece of leftover! I was feeding my 17 year old daughter and her two friends. All very trim girls with decent appetites. They all had thirds! I was delish!!!! Perhaps this should be renamed being we seem to be stuck on the ketchup slathered meat glob as being meatloaf. Easy, just pop it in the crock pot and forget. As far as using electricity all day long, it is far cheaper to run a crock all day than it is to run a 220 amp stove for an hour. This meatloaf recipe is a keeper for all time! The texture of the meatloaf was delicate and easy to slice. All of the ingredients made a delightful gravy. This recipe also tasted similiar to a version of "salisbury steak". I had company for dinner for a "comfort dinner", and he is a "chef"....he loved it. For whatever it's worth: I heard that you are not supposed to put cold food into a hot crock pot or visa versa. I always get my ingredients at room temp first before putting into the pot. I think the one viewer who had raw meatloaf may have a thermostate problem on her crockpot....that happens. Anyway, I will make this recipe many times again....thank you Sandra...you did it again!! Cooking meatloaf in the crockpot is a really good method, and I've done it many times with my own recipe using the time and temp that Sandra said. I've NEVER had a raw meatloaf, so who knows what went wrong with the other poster. My husband said Sandra's recipe was ok, but he liked mine better. I added about 1/3 cup of diced red onions in the meat loaf mixture & a little garlic powder, and some pepper. Some minor substitutions: used the store brand 98% Fat free condensed cream of mushroom soup and the store brand "regular flavor" Shake-n-bake. The dish turned out great! Very moist & flavorful. It is not a traditional meatloaf. I was tempted to add Ketchup as I made up the loaf, but was really glad I did not. The meatloaf and potatoes are enhanced by the gravy from the soups. A great cold weather crock pot meal. I cooked mine 2 hours on high, then 5 hours on low. It was perfect.
