Q: Which fruits and vegetables are the lowest in carbs?

George: This question excites me! Some people still think you can’t have fruit on a low carb diet, when in fact, after the first couple of weeks you can enjoy fresh berries. Strawberries, for example are barely one carb each. Add a little ricotta or fresh whipped cream and you’re in low carb heaven. Cantaloupe and honeydew have more carbs, but are also allowed in moderation.
There are many low carb veggies too. Try lettuce, broccoli, cauliflower, green beans, spinach, zucchini, yellow squash, eggplant, asparagus, collards, and mushrooms.

Go ahead and pair grilled vegetables with a balsamic vinegar, or fresh berries with ricotta. Now I’m hungry!
